In baroque (Haendel is 18e cent. but still very baroque) and further classical chamber ensembles, there is usually no conductor. According to the music, one instrument having the "levée" will be designated to lead, mostly with body langage (breath, or head movement), but on the next movement it can be someone else. We all write on our score who we must look at. The most tricky is not so much the start, but the ending : synchronizing the "ralenti". The conductor becomes mandatory for large orchestra of course, were we don't see nor hear the others, but also for vocal ensembles with complex counterpoints, like JS Bach music.
