I love using a 40 oz peanut butter lid lined wirh a piece of plastic wrap as a "burger press" its soooo easy to make uniform patties too! Mine are about 1/3 pound! And I make a TON when meat goes on sale!

Two tips for burgers, make a dent in the center and they wont shrink or have a rare middle. Also use the waxed bags that are inside cereal boxes and cut them in squares to seperate burgers that you are freezing. They are a better quality waxed paper and dont stick, plus essentially free.

Pampered Chef has an amazing burger/slider press, the bottom has a silicone bottom which makes it easy to get the burger out. Also it creates a dimple in the center which keeps the burger from "puffin" up when it cooks!
Ooh! We’ve been hearing that a thumbprint on top will keep it from puffing up as it cooks, so that dimple must do the same. Smart!
I love meatloaf burgers. Yummy indeed.
I started making my own patties this summer after doing last year with frozen patties from Costco and then trying Bubba burgers. While they’ll do in a pinch, you realize you’d have a more satisfying meal with one you preseason and prep ahead of time. For that reason, it made sense to get a burger press. I have one from Lidl for like 4.99, which I like because I can press evenly from all sides which I think makes a difference in the cooked product. You can also do the stuffed version as well with things like blue cheese. Uniformity helps in freezing and helps the cooking technique into a better burger.
Uniformity is a good point as far as a burger press goes and it's interesting that you can do stuffed versions with it. Thank you for sharing!
We use turkey instead of chicken and do always add crumbled tortilla chips to our taco burgers. Delish!

I shape my Pattie’s with my clean hands. My mom taught me to do it that way. Never had a problem at all
So a little trick I learned is using a medium ice cream scoop. Use two scoops, then press between wax paper. Then use a knuckle divit in the top. The divit helps as the burger cooks and prevents the burger from puffing up
Clever! Sometimes I use my 1/4 cup measuring cup so they are more even.
(I know this is an old upload but I watch you ladies while I cook and this one was in my feed today).
I used to shape my parties by hand. Now I make a lot of them on my bulk prep days so I picked up a press with small circular grease proof paper rounds so I use that and weigh the meat mix as I take it out of my bowl (because I’m kinda nerdy and want them even). I’ll use the press to make my sausage patties nice and neat and even too, and it has bits so I could do stuffed burgers or mini burger patties if I was so inclined
I would love to have a press. I've seen them. I just don't think I'd use it enough to justify the cost. It's a good thing smash burgers are in!

I use a large ice cream scoop to make my hamburger balls and then flatten into patties.

You could replace the blue cheese with Feta in this for anyone who doesn't like blue cheese (I'm one o those folks LOL) - that would be super tasty!! :D I'm so trying it!! (NOTE: This was me commenting again before getting to the end of the video LOL where you already mentioned the feta alteration)... :D

Another game changing hack is this. While at my local Hy-Vee this last week I live in the Midwest, I picked up a pork loin that was on sale for $1.70 per pound and it’s boneless. The pork loin was 14 pounds. I took it to the meat counter and asked them to slice it in pork chop thickness, making it center cut boneless pork chops, literally at $1.70 per pound! Also take your chicken breast that you purchase take it to the meat counter. Ask them to grind it up for you they will do this and they will not charge you anything for any cuts of meat that you ask them to do just by simply picking up the packages in the sale items and even if it’s not on sale pick it up take it to the meat counter do not buy meat for the meat counter. It’s too expensive by the packages that you normally buy and then take it to the meat counter and they will slice it up for you or they will grind it up for you. They were pre-package it in whatever size you want And it will cost you nothing! So if you want ground chicken, take your boneless skinless chicken breast and even if it’s on sale and hopefully it is over to the meat counter and ask them to grind it up I have my meat counter, grind mine up at my local Hy-Vee and I’ve done this at also Walmart and they’ve never charged me a dime to do so and with this being done I’ve had them package them up and 1 pound packages for me. It is a total game changer and keeps you from buying the more expensive already pre-cut meat because we all know if the meat is already pre-cut and certain types or grounded for us it is expensive, but if you just grab the packages and take it to the meat counter at your local grocery store, they’ll do it all for free for you. You’ll have the exact same item that you really want but at a lower Price 4:49 4:53

My go to burger is burger meat, caramelized onions, parsley, black cracked pepper, salt, and heinz 57 sauce. 1 egg. I use my kitchenaide to mix up the meat and then i have a burger press i line with plastic wrap for easier clean up. Crank em out flash freeze for 2 hours and add them in a bag. Cook on the grill with more heinz 57 on top. Yummy! I also do a steak burger. I do burger meat black cracked pepper steak seasoning cooked and sauteeed minced mushrooms and onions. 1 egg.

I just use my hands, but I do usually use gloves because I just don't like it under my nails. One of my favorite burgers I discovered at Red Robins, and it had A1 steak sauce, pepperjack chesse, pickled jalepanos, and I think a spicy mayo. Anyway, I don't always fancy it up like that, but it is so good when I do. Thank you ladies for the chat and I love the idea of a dinner club.
That Red Robins burger sounds good. Anything with jalapeños and spicy mayo is right up my alley!
Wet your hands (water or oil) before shaping your burgers, it helps.
You can also use ice cream scoop to measure the burgers

I've been making meatloaf burgers since about 2007 but I never thought about leaving out the milk. I started making them because my hubby loves meatloaf (I hate it) and we couldn't eat it before we had to leave out on our weekly dedicated semi run. I now like the burgers especially grilled but I still don't like regular meatloaf lol.
I just use my hands to shape my patties but I kind of try to portion them b4 I make them.
You said fancy ketchup...my brain said Dijon ketchup... then you said pre-wrapped sausages! Lol #nailedit
I love a meatloaf burger with blue cheese.
If you want your patties to stay flat and not puff up, put a thumb print in the center . Great for keeping the size ratio

You can oil up your hands a bit before forming burgers by hand if your meat mixture is sticky.

When I have a mixture that is very sticky I roll each ball in dry bread crumbs, then I shape each one the breadcrumbs will not change the taste but it keeps my hands cleaner,
Going to give these a try for sure! We can also get ground chicken cheaper than ground beef or ground turkey. Currently I can get it here for under $3 a lb US -- looks like that's about $4 Canadian. I prefer ground chicken actually. To me, it's more flavorful.
They all are good. The blue cheese ones are special though. I would be interested in trying the chicken too. Or some people blend them to make them cheaper which is interesting.
I am on team ice cream scoop. I have multiple sizes and use them for burgers, meatballs, cookies, muffins, and anything else I want to be uniform. One of my favorite kitchen gadgets. I really enjoyed listening to you two chat it up while prepping the burgers. We have been enjoying chicken and bison burgers lately. Is bison something popular where you are or is it just a Texas thing?
Bison is quite popular here too. I use my ice cream scoop for muffins too!
i plunt the burger in between two pieces of wax paper and press them into patties
Instead of breadcrumbs I use oats. Good tip if you need gluten free. Was watching a video yesterday where the cook made an indent in the middle of each pattie with her thumb. She said they cook more evenly.

They look good, eh? Cook them from frozen for 5-7 minutes per side until 165F in the middle. When cooking chicken, I always prefer to trust an instant-read thermometer, rather than going by sight or feel. You don't to mess around with that! Good luck!

I'm from the south in the U.S. My burger better be well done. LOL I love rare steak but hate a burger that is not fully cooked.
I’ve never seen sliced bleu cheese. It is crumbles in the States. Slices would be very convenient
They are very convenient. You can buy crumbles here too but I almost always buy the slices because I can always crumble them if I need to.
I live in ohio. Its definitely a thing. If you can't find them in prepackaged ask your deli counter. 😁
Where I am in the states chicken is $4.89lb If you wet your hands a little bit the chicken won't be that sticky

I make homemade Burger patties all the time to freeze but I am one of those purists who is offended by the use of bread crumbs and egg in a Burger Patty lol. I have always said those are Mini meat loaves and not burgers, and since your recipe comes from a meatloaf recipe that proves me right! I'm sure they are delicious though. but for me a Burger is a simple meal and mixing up all that stuff is too many steps. Good meat on the grill needs nothing more than salt and pepper for me! I make my own sausage patties too , from ground pork and for that of course I put lots of seasoning because that's what sausage is.

I've never heard of adding graham crackers to meatloaf or burgers. I need to try it. Have you ever tried cheeseburger meatloaf?
It just gives it a little extra layer of flavour. I have made a layered meatloaf and hat had cheese and bacon bits in it that is quite good. Very rich! Maybe the cheeseburger meatloaf would be like that?
I've thought about adding bacon to it, I'm sure it would be good. I've started making a bbq cheeseburger meatloaf that my husband really likes now.
I have in my Amazon wish list a grinder because I want to buy my own chicken breast and grind it myself because it’s cheaper than buying already pre-ground chicken. I can get chicken breast finally now for $2.29 per pound this past week at a local Hy-Vee I got chicken breast for two dollars per pound if you grind the chicken up yourself it’s so much cheaper ground chicken here in my area is $3.29 per pound already ground up for you But again if you have a grinder do it yourself so much cheaper! Another hack is this ground beef is crazy expensive right now even the cheapest grade of ground beef which is 73/27 is almost 4 dollars in my area. This week I was able to find already premade hamburger frozen patties great value for $1.99 per pound! Instead of buying a roll of ground beef, I bought 5 pounds of hamburger patties for $1.99 per pound! I will take these hamburger patties and not only use them as hamburgers but also since it’s just hamburger and a patty shape I will go ahead and terret apart and cook it and use it for taco meat and also for things to put in like my chili or spaghetti or any other meat dish! I always often tell people look where you would least expect to find sells hamburger patties in the frozen food section at Walmart was a game changer this week I plan to go buy mini mini boxes of hamburger patties at $1.99 per pound because once again it’s just ground beef in the shape of a hamburger no seasonings and you can do with it what you want. I ended up paying $10 for 5 pounds of hamburger meat because I use the great value Walmart hamburger patties! Have you ever thought of doing a juicy Lucy as a hamburger? That’s where you just have the cheese in the center of the hamburger you make a well put the cheese and then go ahead and turn it into a hamburger patty and then when you cook it, the cheese inside will melt and as you’re eating the hamburger oh my goodness my kids love it awesome my kids love stuffed hamburgers. We also do Swiss and mushroom stuffed hamburgers and also cheddar cheese and bacon stuffed hamburgers! My kids do not like blue cheese, so that’s why we use the cheddar instead of blue cheese. 3:33

It is seriously one of the best things I’ve ever done for myself. It gives me something to look forward to, adult conversation away from being a mom, a date out with my husband, time with friends, fun, plus the food is delicious and I’m not always the one cooking!

I cheat when it comes to burgers... I buy Sweet Onion Bubba Burgers. Sorry, no help from me in that department. Now I make a mean meatloaf with Thai chili sauce, and I always quadruple the recipe; eat 1 that night and then slice and flash freeze the other 3 for future fast dinners. No issues handling raw meat, but I have an autoimmune disease that affects my hands so I usually get help from my son mixing that much cold meat at 1 time.
Thai chili sauce is good in anything (in my opinion!), but I've never thought to put it in meatloaf before. Thanks for the suggestion!

No kidding! How's it taste? I've eaten wild game and some weird things like seal flipper (made ina pie) but I never dawned on me that there is a market for kangaroo.
Side note: my cat has allergies and kangaroo food is on the list of things she can eat during an elimination diet I'm trying for my cat because it's something she hasn't had before. 🤣
