    I kept all my large bones from my deer last month, and for christmas my mom gave me a bone cookbook. I feel all this is adding up for greatness.

      @@carlbibben7475 it's called "BONES. Recipes, history, and lore" by Jennifer McLagan.
      I haven't gone through it yet but I now realize it isn't about cooking variations of bone marrow. It's more of a cookbook about things that are bone in and how it impacts the flavor and stuff like that. it still seems like a very good book with history and recipes. I would reccommend it anyway. But probably nobody knows as much about bone marrow as Steve.

    As a person who didn't grow up around hunting I can't thank you enough for making these great shows that show the process from start all the way to the table. I feel like most only shows part of the hunt, but not what to do once the game is harvested. Thank you for taking it to the finish line!

      I've never gone hunting and have only shot a firearm just a handful of times, but I find this all very fascinating and it makes me interested to see where I can learn. This is all so interesting

    When slow cooking tougher cuts, add bay leaves to your braising liquid to help break down the meat. Won't change the flavor of Steves recipes, just helps it come out better.

    My wife doesn't understand it. But with my hand on my heart, I say this with all honesty. Every single night I watch MeatEater to see what I can learn and take in from Mr. Rinella. I'd give anything to shake this man's hand and pick his brain on a walk through the mountains. Thank you for all you do and the wealth of knowledge you offer to us all. Even if and when MeatEater comes to an end, I'll still watch reruns. Heck I do it know lolol. Best way to calm down before going to sleep. Watch amazing hunting, cooking, knowledge. Amazing.

Not everyone is going to be a vegan or vegetarian, if you are going to eat meat, the most ethical way is to be connected to your food instead of buying meat from some industrial farm where the animals are mistreated. All hunters are more ethical than you or anyone else who contributes to that way of life, and no one here is a coward besides you hiding behind a screen.

    On a cold winters night, Osso Bucco with crusty white bread can't be beaten (I've only had it with beef though). It's easy to make and full of flavour, I imagine the venison version would be delicious too.

    When u rub the protien with oil before adding seasoning, it creates a coating barrier that makes it hard for your seasoning to penetrate for flavor.

    I don’t like traditional hunting shows, but I love Meat Eater. It’s not at all about trophy hunting, it’s about the adventure, the hunt and Steve encompasses my beliefs in hunting. It all about the hunt, providing wonder food and a genuine respect for the animals you’re hunting. Yes you can respect something and kill it. Thank you so much for your show.

    You're the man, Steve. MeatEater inspired me to become an adult-onset hunter. Going on my third season and haven't had success yet, but I'm learning loads more every year and absolutely have the show to thank for giving me the nudge to actually get outdoors. Hoping to get some geese tomorrow to make my own field to table meals.

That’s why, rotting corpse eating corpses. Five days or more sitting inside your stomach. Deodorant mask your symptoms but you still smell like a corpse. Your feet and armpits are smelly. 🥾🧦👕🤮. Vegans don’t have this problem. Clean and fresh every day. No deodorant. And clean ✅❤️😬🦷💪. Next day poop ✅💩. NO stink. I always smell like a corpse eating dead animals. But now I am vegan, and I don’t stink. Clean and fresh shoes are absolutely clean ✅🥾🧦👕🤗. I wish I could be vegan at birth !!! Try it for a month you’ll see. Vegan burritos and vegan curry and vegan oats and berries......

    Alot of those spices trap oils that blossom when you add a little oil when roasting before using them. It's called blooming your spices. Try it out. It can make a world of a difference. Think of rubbing with a paste, and not a dry rub. It helps seal juices in as well

    Dead End Deer Camp in Northeastern Lower Michigan will not Be the Same ,,,,, Steve Great Stuff again ,,,,I did the Hole Shanks 10days ago and My kids Loved that meal... The Bone Marrow is going to become a thing again,, I lost that at the table when my Grandmother died 17years ago....

    Great work. A hunter that knows the value of sharp knives. Osso Bucca is probably the best. Only difference is I make mine in Sous Vide at home. Beautiful use and respect for game. Thanks for being a great example.

    We make a lot of sausage with game meat in south africa. And we only use lamb tail fat. 75/25 meat to fat ratio. 24/26casings. And we wil cook of all of all the meat from the bones in a pressure cooker and make venison pies from that only using. Salt, black pepper, coriander, cloves, bay leaves and pork spek and bacon.

    ive watch you hunt and i watched you cook, and came to the conclusion that you look so good at what you do is because your left handed. i know im one to. never had a chance to hunt out west being from PA. But had my fare share of whitetails. started hunting at 12 65 now. dont do much hunting anymore. but watching you is satifying. im sure you wont see this, but i had to comment.

    I love watching you cook brother! Your show is the best hunting show ever made but you could beat some of the "top chefs" any day. Can't wait to retire from the Navy and live the Montana life again. Never ate beef or pork until I went to boot camp. Keep up the channel!

    So many of us, lifelong hunter/providers being rooted in deep family tradition do not utilize all the different portions, because of lack of knowledge, and experience. Most of our peer group, only get to harvest once a year, and hindsight is 20/20, then next year rolls around....and there's still "Balls on the Ground"...as this years promise is a New Years Resolution.....Just saying. Good show....gives new meaning to "Shanks Mare". Yummy !!

    First time I had Marrow Bone was at the Red Ear Stag in Atlanta (very similar story, high $ joint). They split the bone long ways so it was like a roasted dish of bone marrow. Amazing.

    try a little dry mustard powder with the salt and pepper when you're dredging them shanks. nice job browning brother

    I cut shanks in half. Butter an bacon melted in a pan garlic salt an pepper. Roll the skanks in it. Smoke em for a hour or more. Throw em in a foil pan. Cover in bacon. A little beer an cover. Cook 300 degrees three or for hours. The meat comes off the bone an it's sticky an tinder. Call it sticky legs

    That is what it's all about..all the hours in the stand or hiking through the cold and endless hours waiting and observing nature. To have some of the finest food and enjoying it with friends and family. Creating memories and stories to tell for years to come. P.S. I wanna be a writer to express my feelings and journeys throughout my experiences with nature and create my own narrative of the times and experiences that I have along my own journey as a hunter and how my life and nature coincide together.

    Good work Steve. I've hunted and cooked my kills all my life. I just started watching your stuff and damnit I'm irritated. I've already watched it all. But it's OK. I just got your books in the mail so that should help 👍 your knowledge and articulation of the goings on and the historical knowledge you have makes it for me. I feel ashamed I didn't start watching your stuff before. Truthfully I gave up on hunting programs years ago and had no desire to watch them(Wells being the one exception). I thought your were annoying after the first show. 3 weeks later I have watched everything you've done(including JRE)and own all your books now. Next up the gear. Don't need anything but I see what you are doing and want to support it 💯. PS there's a part of me that also agrees with your brother on it 🤷‍♂️

    I really love pate, so instead of butter I will use bone marrow that has been roasted as the emulsifier for the liver with a good amount of fresh thyme and rosemary. That is easily my favorite thing to spread on toast besides apple butter.

    That cornmeal, water, cool and fry we call nightcrawlers round my parts. They are kind of bland and go great with just about any condiment. They are really good for that and really cheap

    I laughed so hard when you were talking about the testicle and cooking it, like how it burst and you said "just got too built up with pressure". I would love to see you and Gordon Ramsay do a show together and you taking him hunting and then maybe cooking your own separate dishes like he does with people on "Scrambled" and seeig what each other think. I'll definetly be trying your recipes, thank you for the great shows and insight.
