There seems to be a buzz at the moment over these gorgeous ranunculus roses and I had been meaning to put up a video for some time now! They are much easier than they look, I prefer making these over the regular buttercream roses.
BLUEBERRY CUPCAKE RECIPE:
1/2 cup butter
1 cup caster sugar
1 tsp vanilla extract or vanilla bean paste
2 eggs
2 tablespoons sourcream
1/4 cup buttermilk (regular milk with a teaspoon or 2 of either lemon juice or vinegar)
1 and 1/4 cup of self raising flour
1/4 tsp baking powder
pinch salt
1/2 tsp group cinnamon
1/2 cup blueberries
BUTTERCREAM FROSTING
250 grams cream cheese
500 - 600 grams of icing sugar / powdered sugar or until firm enough to stick onto your spatula without glopping off
optional: 1 tsp vanilla or other flavouring
I used the petal tip 103 for these flowers
add your sugar in gradual amounts, maybe in 3 to 4 batches, always beating to combine after each addition.
FOR BUTTERCREAM ROSES
250 grams unsalted butter
500 grams icing sugar / powdered sugar, more depending on the stiffness you want.
SIDE NOTE: I beat my buttercream for an additional 2-3 minutes on medium speed until it became beautifully pale and creamy. This stops the edges from fraying and breaking, as per my last video on the floral wreath cake. This is a learning process for me as well ;) !
So excited to post up this tutorial! I hope you guys enjoy it and are able to take something useful away from it.
And if someone could be a dear and leave a comment below instructing me how to pronounce this flower haha. thanks guys! until next time

Thank you for sharing this beautiful video. Its amazing how you can actually hold and lift your buttercream flowers with hands! Did you freeze them earlier?. Just curious. Thanks again! Love from Malaysia
Afuan Junaida thank you !! :) Yes, I froze them for 15 minutes first haha. the easiest way to do it I reckon.

I love ur videos but is making roses Spoce to be hard. I've tried before n I make about 6 in 45min I feel like my hands arnt as steady n still. U make it look so easy!!!!!
Haha thanks Sam Hel ! It definitely comes with practice, I was shocking when I first tried to make them. But doing projects like this cupcake will help because you need to make heaps at once so it's good practice. You will get quicker at it and start to notice when angling the nozzle in a particular direction helps, or the way you might hold the bag changes, etc. Everyone is different and will find they work better using different tactics :) you will get there !!
They look wooow......
Thank you +Mrudula Gavand ! :)
Hi Rosie! Don’t u add vegetables shortening for your buttercream flowers?
Espero haber respondido a tu pregunta! Estoy utilizando el traductor de google para esto, así que espero que tiene sentido :)
love this video! can you tell me what patty pan size you use for your cupcakes? Thanks!
thank you rice123rice123 :) I just checked the patty pan but it doesn't say anywhere :-S it's definitely not the mini one though lol. If it's it any help I bought it from Kmart.
I like it
+Shosho S thank you!
Beautiful. Hey I hav a question. What happen when they stay outside ? Will they melt?
Hey +Melissa Garcia, it depends on the temperature. If it's sitting in direct sunlight then they likely will, but otherwise they keep their shape pretty well :) the buttercream usually crusts a little.
I love your roses that your are piping. Am sorry the technique on piping ranunculus flowers are open swipe horizontal across. Check out Liz Larson video on ranunculus flower in buttercream. Your so talented awesome work.
Hi.. what a lovely tutorial n thank you cuz giving me a new idea on upcoming cupcake order.. but I would like to ask you, will the frozen flowers still in shape after few hours in room temperature?. I'm from Malaysia, our room temperature is about 20-30'c .
Hey wani mcaccessories , thank you! Yes they will still hold their shape :) Unless they are direct sun light.. Then they will likely melt / disfigure.
Do you have any tips in how to color buttercream so they get that vibrant color? I have always found it hard to achieve bright colors in buttercream even when I use Americolor gel. Thanks!
Hey Glenda Lynn Dael , the only thing I can think of is by applying lots of gel food colour. I find that the colour becomes just a tad darker after the icing hardens though. Unless you add a little bit of white gel colour to help the real gel colour come through (here in Aus the butter is a darkish yellowy colour and it causes some gel colours to discolour).
Beautiful tutorial, thanks for sharing Rosie! What type of frosting did you used for frosting your cupcake? I usually used SMBC for frosting but I think I need to make ABC for making/piping flowers because it is more stable in piping?
Hi +Ami131531, I used American Buttercream to pipe the flowers :) I haven't tried piping flowers with SMBC but I think it would work all the same. We use a very silky and kind of soft buttercream at work, but I have piped flowers with it all the same and it wasn't too bad.
Ami, what is SMButterCream? Thank you,
Sheila
that nice.....Agnes from the Philippines...
+Agnes Servino thank you so much Agnes! x
your welcome...... : )
This is sooo beautiful love it can this flower b made in fondant if yes plssss can u make a vid thank u xxx
Hey there!! Yes it can, I will make a few more floral gumpaste videos :) I have a mini cake idea that will finally feature the peony haha so stay tuned for that one ;) thanks for your support!!!
Hii. Beautiful flowers 👌👌
Wanted to ask, how many days in advance can you make the flowers before serving?
Hi lioness76071, Thank you! You can make the flowers a week or so in advance and then keep them refrigerated in an air tight container until needed :)
Rosie's Dessert Spot thank you so much for the fast reply! xx
no worries, enjoy making the cake!! If you post any photos I would love to see them :D
HI, can we make same flowers using whipped cream?
Здравствуйте!!! очень нравится как Вы красиво делайте цветы!!! Подскажите точный рецепт крема на русском...если это возможно...
superbe'''''''''''''
+sai goud thank you!!
Hi, can i ask how do you make those buttercream roses so firm to touch? As in you can straight away drag it and put on top of the cupcakes. Thanks :)
Hey +Peggy Seow, I place the roses in the freezer for about 15 minutes or so so the buttercream becomes nice and hard.
thanks! i definitely will use this technique for my cake :)
beautiful. what is the tip you are using? 103?
Hi! I have used either the 102 or the 103 tip. It was definitely smaller than the 104 :)
Please rosie answer me. Im just wondering if you sift your sugar. And also this important questiin is.. can I make those roses with CREAM CHEESE icing insted of buttercream?
Hi +dalal22111990, I don't sift my icing sugar when adding it into the buttercream. And yes, it can be done with cream cheese frosting :) Although you can substitute half of the cream cheese for unsalted butter so that it holds the shape of the rose much better :) x
Rosie's Dessert Spot thanks sooooo much!!! Love u
wow
hi rosie
how do you make the buttercream white?
how much buttercream will I need to make at least enough 12 cupcakes please?
so that's 24 flowers and leaves
Hi +maz khatun, I just add the usual ingredients (butter, icing sugar, vanilla extract and milk). If you wanted the buttercream to come out even paler, you can use vanilla essence (which is white and not brown) and even add some super white gel food colour into the mix. Alternatively, you can also use half butter and half vegetable shortening which will result in a very white butercream also. For 12 cupcakes, I would use about 300 grams butter, 600 grams of icing sugar, 1 tsp vanilla essence and 2 to 3 tablespoons of milk. Because we're only filling the cupcake to the rim of the case, there won't be need for very much buttercream. I say 300 grams butter just to be sure, better to make a little extra than to have to remake more buttercream :) happy baking!
Thanks rosie xxx
I just tried piping but it's not neat on the edge of the petals?? its like it's fraying and not staying together what should I do?
hey +maz khatun it sounds like it might be too dry. Adding a little bit of milk should help with that.
Mine is already soft if I add any more liquid it won't pipe well
hmm.... I'm wondering if beating the buttercream for a little longer might help? maybe on high for a minute?
I'm going on whim here. I will see if I can find a solution online, usually cakecentral has a solution to everything. This hasn't happened to me before to be honest.
Thank you so much Rosie
can u make a cake of 1D??...
Hi! What can you do with a tip no. 61?
Hi +Austin Dayacap, piping tip #61 would be great for making ruffles and even roses. It would definitely add a unique touch :)
Rosie's Dessert Spot Can it be used for this type of flower? I just impulsively bought it because it was super cheap ($0.25). Trying to make my version of your Flower Wreath Cake. :D
for materials of buttercrean anything ? can you share ?? :)
Hey +Lucky Gitara, I have the buttercream recipe in the description box under the video, if you can find the "show more" tab, it will be under there :) I also used a 104 tip to create the petals. Hope that answers your question!
ok. thank you for the information, very useful :)
تهبل
is it easy to do.
+Naomi Haugh324 is you have made buttercream roses before it does help the process. Otherwise, it may take a little practice :) but you can do it!
а крем у вас какой? розы ведь застыли
Can you make cookie shot please??
Reika Yulia I just googled what is cookie shot- they are adorable!! I will add it to the list :) thank you for your comment!!
Rosie's Dessert Spot thanks for the reply.. yea, i tried to leave the flowers on kitchen table for a night, yeap, my flowers still in shape. love it!
i dont think this icecream scoop thingie serves any purpose. a normal spoon does the job better with more control if you hold the handle upwards and point the end downwards...its just an addition to the long list of utensils to be washed..lol..
niharikajaisudan haha true... spoons are much easier to clean. I personally feel like I have more control in keeping the cupcakes the same size as you can press the ice cream scooper against the bowl to flatten out the batter, so each one will be the same. But that's my own personal preference and reasoning :)
Rosie's Dessert Spot i dint see in the video what you explained here... lol...
Rosie's Dessert Spot i was kidding by the way.... you are the magician you choose your wand...
можно рецепт?
Lovely work but I wish the focus was clearer. I mean, zoomed in.
maria haroon thanks for your feedback Maria. I know what you mean, I am working on it. I wonder if there's a special lens i need to buy specifically for the close up moving shots. I will have to look into it..
