Ranunculus Buttercream Tutorial- Rosie's Dessert Spot

  • In this tutorial I demonstrate how to make buttercream ranunculus roses to go atop a moist blueberry cupcake- recipe for that baby is also demonstrated in this video.

    There seems to be a buzz at the moment over these gorgeous ranunculus roses and I had been meaning to put up a video for some time now! They are much easier than they look, I prefer making these over the regular buttercream roses.
    BLUEBERRY CUPCAKE RECIPE:
    1/2 cup butter
    1 cup caster sugar
    1 tsp vanilla extract or vanilla bean paste
    2 eggs
    2 tablespoons sourcream
    1/4 cup buttermilk (regular milk with a teaspoon or 2 of either lemon juice or vinegar)
    1 and 1/4 cup of self raising flour
    1/4 tsp baking powder
    pinch salt
    1/2 tsp group cinnamon
    1/2 cup blueberries
    BUTTERCREAM FROSTING
    250 grams cream cheese
    500 - 600 grams of icing sugar / powdered sugar or until firm enough to stick onto your spatula without glopping off
    optional: 1 tsp vanilla or other flavouring
    I used the petal tip 103 for these flowers
    add your sugar in gradual amounts, maybe in 3 to 4 batches, always beating to combine after each addition.
    FOR BUTTERCREAM ROSES
    250 grams unsalted butter
    500 grams icing sugar / powdered sugar, more depending on the stiffness you want.
    SIDE NOTE: I beat my buttercream for an additional 2-3 minutes on medium speed until it became beautifully pale and creamy. This stops the edges from fraying and breaking, as per my last video on the floral wreath cake. This is a learning process for me as well ;) !

    I love how precise and clean your artwork.is. lots of videos I've watched can be sloppy and too fast with their work, resulting in a slightly tacky, unorganized look. Your finished products are always so beautiful...i could watch what you do all day. ^-^ Keep up the amazing work!!

    I love ur videos but is making roses Spoce to be hard. I've tried before n I make about 6 in 45min I feel like my hands arnt as steady n still. U make it look so easy!!!!!

      Haha thanks Sam Hel ! It definitely comes with practice, I was shocking when I first tried to make them. But doing projects like this cupcake will help because you need to make heaps at once so it's good practice. You will get quicker at it and start to notice when angling the nozzle in a particular direction helps, or the way you might hold the bag changes, etc. Everyone is different and will find they work better using different tactics :) you will get there !!

      Candy Sanchez Gonzales hola, las flores buttercream necesitan descansar en el congelador durante unos 15 minutos antes de colocarlos en el pastel. Espero haber respondido a tu pregunta! Estoy utilizando el traductor de google para esto, así que espero que tiene sentido :)

      Hey +Melissa Garcia, it depends on the temperature. If it's sitting in direct sunlight then they likely will, but otherwise they keep their shape pretty well :) the buttercream usually crusts a little.

    Hi.. what a lovely tutorial n thank you cuz giving me a new idea on upcoming cupcake order.. but I would like to ask you, will the frozen flowers still in shape after few hours in room temperature?. I'm from Malaysia, our room temperature is about 20-30'c .

      Hey wani mcaccessories , thank you! Yes they will still hold their shape :) Unless they are direct sun light.. Then they will likely melt / disfigure.

    Do you have any tips in how to color buttercream so they get that vibrant color? I have always found it hard to achieve bright colors in buttercream even when I use Americolor gel. Thanks!

      Hey Glenda Lynn Dael , the only thing I can think of is by applying lots of gel food colour. I find that the colour becomes just a tad darker after the icing hardens though. Unless you add a little bit of white gel colour to help the real gel colour come through (here in Aus the butter is a darkish yellowy colour and it causes some gel colours to discolour).

    Beautiful tutorial, thanks for sharing Rosie! What type of frosting did you used for frosting your cupcake? I usually used SMBC for frosting but I think I need to make ABC for making/piping flowers because it is more stable in piping?

      Hi +Ami131531, I used American Buttercream to pipe the flowers :) I haven't tried piping flowers with SMBC but I think it would work all the same. We use a very silky and kind of soft buttercream at work, but I have piped flowers with it all the same and it wasn't too bad.

      Hey +Peggy Seow, I place the roses in the freezer for about 15 minutes or so so the buttercream becomes nice and hard.

      Hi +dalal22111990, I don't sift my icing sugar when adding it into the buttercream. And yes, it can be done with cream cheese frosting :) Although you can substitute half of the cream cheese for unsalted butter so that it holds the shape of the rose much better :) x

    how do you make the buttercream white?
    how much buttercream will I need to make at least enough 12 cupcakes please?
    so that's 24 flowers and leaves

      Hi +maz khatun, I just add the usual ingredients (butter, icing sugar, vanilla extract and milk). If you wanted the buttercream to come out even paler, you can use vanilla essence (which is white and not brown) and even add some super white gel food colour into the mix. Alternatively, you can also use half butter and half vegetable shortening which will result in a very white butercream also. For 12 cupcakes, I would use about 300 grams butter, 600 grams of icing sugar, 1 tsp vanilla essence and 2 to 3 tablespoons of milk. Because we're only filling the cupcake to the rim of the case, there won't be need for very much buttercream. I say 300 grams butter just to be sure, better to make a little extra than to have to remake more buttercream :) happy baking!

    I just tried piping but it's not neat on the edge of the petals?? its like it's fraying and not staying together what should I do?

      hey +maz khatun it sounds like it might be too dry. Adding a little bit of milk should help with that.

      hmm.... I'm wondering if beating the buttercream for a little longer might help? maybe on high for a minute?

      +Naomi Haugh324 is you have made buttercream roses before it does help the process. Otherwise, it may take a little practice :) but you can do it!

    i dont think this icecream scoop thingie serves any purpose. a normal spoon does the job better with more control if you hold the handle upwards and point the end downwards...its just an addition to the long list of utensils to be washed..lol..

      niharikajaisudan haha true... spoons are much easier to clean. I personally feel like I have more control in keeping the cupcakes the same size as you can press the ice cream scooper against the bowl to flatten out the batter, so each one will be the same. But that's my own personal preference and reasoning :)
