The -5 footage has less posterization/banding. The sensor noise acts as a dithering filter. Always shoot clean without noise reduction in camera. Leave that to post production. Side note: I'm surprised that the GH5S had any noise since you were at such a low ISO ( ISO 3200 ) for the sensor that's in the GH5S; maybe you were not in the dual ISO mode.
thank you this was nice. On my g85, I keep noise reduction on -5 just because the sensor is so good that it does not need noise reduction. For my g6, that a whole different story. Iso 800 or above is pretty noisy so I tend to run noise reduction at -3 just to help it a little. I don't mind noise in my footage so just helping it a little is all I need.
I really appreciate this GH5s reference ”database” you’re building here on your channel. Next time you could also try HLG which has 800/5000 base ISOs and the best DR of all the profiles :)

You dont have to worry about noise when posting to UA-cam because UA-cam compresses the crap out of any video
