I agree completely. That's the first thing my wife said "wow I didn't think it was that big". It's a beauty for sure. Haven't got to fire it up yet but I feel like it has already exceeded expectations.
Your going to love it! BTW, don't let the temps fool you. I went 3 hours without my temps falling off once I got it dialed in to my target temp, and finally it started to fall a little, and when I looked in the fire box, there was nothing left, lol! Not even enough embers to start another log. That's how well the heavy pit holds heat. So that taught me to check it once a hour, but will probably be adding a split log about once every hour and a half to keep her running smooth.

Rus, that looks like the finest offset I have ever seen for a back yard smoker, they put some thought into this one, all the mods you would need to do with a COS you would not need to do that with this one. Heavy gauge steel, great welds everywhere. Finally, someone finally figured where the the exhaust for the smoke stack needed to be and hopefully an accurate temp gauge, great smoker.....

They had some awesome trailer pits there the day I picked this one up, and I was really surprised by the price! I figured they went for much for than that.
I've been lurking your channel for a while and I appreciate all of your videos and look forward to the upcoming ones, especially the ones with this smoker because I've eyeing them for a while now. Being that I'm just about 15 miles south of them on I-45 in Spring, Tx. it seems like a good fit but I haven't been able to find a reputable source for information on their cookers. I'm also a central Louisiana native that lives in the Houston area now so I appreciate all of your cooking techniques and recipes. Thanks for your efforts and keep up the awesome videos.

Congrats to you as well! Great choice! LSG does such awesome work on these pits, and have features that no one else has or is doing such as the 1/2" fire grate! That's a really big deal to me! More videos coming for sure! This will be my go to pit when I'm doing a low and slow cook, and I'm going to be using the griddle and grill as well in up coming videos.

Thank you for your excellent review. I am getting ready to order a 20X36 for my birthday. Although the design is a little different for the 20 inch series I have to believe the quality of the build is just as meticulous as the 24 inch series.

Nice pit.!! I had a 20"x 42" custom made pit by pits by JJ in Houston which looks similar.... I'd recommend an ash catching pan in the fire box for an easy clean up... Hope you enjoy it for many years to come!

Thanks, I love it! There is not really a water pan, but instead, the water actually goes into the bottom of the pit if you decide to use water, and I think I will on this cook coming up. It not only stops meat from drying out because of the moister it's adding to the surrounding air, but it helps out in keeping a even heat across the pit, while using the tuning plates as well, so I want to see how it goes, then I'll do a cook without water and see which I like best.

Ready for a updated video of your fire management since you have learned your pit. I'm still learning. Mostly all things you can do with the plates. Makes for a versatile, efficient machine.

Rus, that is one of the most solid built offsets I possibly have ever seen. A LOT of thought clearly went into the design of this beast. I don't have time to skim through all the comments, so apologies if you've already addressed this...but I noticed towards the end you had your iGrill set out. I'm assuming you had a couple ambient pit probes for some temp checks throughout the chamber? I'd be curious how well it regulates heat throughout the chamber and if you noticed any big variances. Also...like I'm sure some others have mentioned, definitely please try out using water in an upcoming cook and let us know if you think it's needed or not. Amazing cooker brother. I know your AMPING! :)
Steve, this truly is a beast of a smoker and built to take it and to last! Yes, I had two probes in the smoker. Each probe at opposite ends of the lower grate. I used them to see the temperature difference from the fire box side to the exhaust side as I made adjustments to the tuning plates. I got it tuned in with only a 5°F difference, and once I add water to the pit on my next cook, I should see no difference at all, but I can live with 5° difference all day long as is. That's what I love about the tuning plates. If I want a 50° difference I can do it for a hot and cooler side. Thanks Steve, and I appreciate you stopping by brother!

Russ I purchased a 24x40 smoker from Lonestargrillz based on this very video. I’d like to thank you for all of your great reviews and I am very pleased with my purchase. The only thing I’d like to know is your honest opinion on the damper door. I feel it isn’t large enough for proper air flow. I find myself having to open the door slightly or the fire starves for air and I get dirty smoke. Have you experienced this?
Congrats on the new Lonestar Grillz offset! Your going to absolutely love it. Over time, I have learned to adjust my fire size for the heat I'm trying to achieve. I've shown that in other videos since making this one. Once you start your smoker with two to three splits of wood, just feed it a split as it needs it to maintain the range your looking for with both intake and exhaust wide open. They are both relatively the same size which makes for even constant air draw. Every since I've starting doing that, I've had no problem at all maintaining a clean fire with excellent smoke. As with any offset you will experience temperature changes when you add a new split. Don't worry about that, because it doesn't last long and will not effect the cook. It will balance back out. Just leave everything set as you had it before adding the split. Another tip is to put 4 to 5 splits on your fire box top to heat up as your smoking your meat, and as you add one, it will ignite very fast and still produce a clean smoke. As you use one, replace it with another one. If you have any more questions please don't hesitate to ask. Hope this helps.

If you put your coals and logs all the way to the side walls on the back 1/2 of the firebox. You can preheat and dry your next logs to burn on the front of the fire box. Burns cleaner. But you probably know that. Great video. What's the msrp on this baby???
I've actually got another way that I will be doing the logs when I actually have meat in the pit, but yes, that's a great method for getting them hot and thanks! Their website has a sale price of $1,850 or it did last time I looked.

I get the pit up to temperature with 2 splits, and then add a split around every hour to maintain temperature. That is on this pit. Cheaper and thinner walled offsets are not as efficient and can go through more wood. I'm still super happy with mine.
You mentioned couple weeks ago you had one on order. I just found out about offset smokers in January. The first one I found on the web was the Lone Star, then Gator, then Yoder. I really wanted to go big, but ened up with another make, which is built well too, just cheaper. But, as we always heard...you get what you pay for. Yours is top dollar but it is definitely top quality. Every point on the walk thru is nothing spared. Enjoyed your burn in vid, and looking forward to making some good cooks on it. There are a hand full of fabricators that make these custom made grills, and they do cost more, but to me, well worth it and Lonestar Grillz is doing a few things that no other company is doing such as the 1/2" fire grate, and their top lid flanges conform to the shape of the smoker like no other. This grill will last a life time if cared for, like removing ash after every cook, and keeping the fire box oiled down in between cooks as well as the charcoal basket. Hey russ when I worked offshore many many moons ago ppl used to make grills out of pipe for offshore use. 3/4 in., Rebar and flexible grating I think it's called. the grate with the diamond shaped holes like in your grills charcoal basket and the shelf you spoke about. Anyways they were like bad to the bone so I know this is awesome. Steel is a great holder of heat i guess is how I wanna say it. It distributes it holds it very evenly.
Rus I am so very impressed with your new smoker. I was planing on adding a stick burner to my grill collection this summer or fall. I was going to go with one of the Yoders for sure but after seeing the quality and all the options on your pit I have some thinking to do for sure.

Russ, When using a stick burner like this..tell me about over smoking. If I'm 6-7 hrs in & fuel is out..as you keep adding wood does it give it too much smoke?
If you leave your exhaust and intake wide open on a offset and manage your temperature by the size of the fire, then you will never have to worry about over smoking meat regardless how long it takes. That's why you have probably heard that you want a very thin blue smoke coming out of the exhaust stack. In some cases, you may even realize that you would like a little more smoke flavor. A offset is a different beast, so forget anything you have ever done using a charcoal/wood chunk combination. It's not the same, but you will love the results off of the offset more than any other smoker. I'm talking from experience and hope you will find out for yourself.

I adjust them to what I'm needing on certain cooks. If I want a constant temp across the pit I move the one closest to the firebox about 1/2" then I space the next one around 1" and the last one around 1.5". It's really something you are gonna have to play around with after you get the pit. Congrats and enjoy
Just asking will the food taste any different the first time sense it's getting season in it?? And I would imagine that the food would taste better and better the more cooks it has???
+Neal Hamilton I went with a offset because I like the ability to get different temps from one end to the other, and still have the ability to have the same temp from one end to the other, if I want via tuning plates. A back flow doesn't give you those choices. It's designed to run the same temp across the smoker with no real ability to have a hotter side if you need that on some cooks. I definitely made the right decision with this Lonestar Grillz offset. Very happy with it!
I hear the 20" is a good pit, but I'm very partial to the 24" firebox on mine. The 20"x42" should have about the same amount of cooking area as my 24x36, but it's really your choice.

I have watched a bunch of your videos and and being new to bbq my question is why a horizontal offset over a vertical offset and is temperature control the same for both styles thank you your videos are excellent
First, thanks for watching my videos. I guess it comes down to personal preference and capacity needs. The 36"x 24" offset is all I need and I absolutely love the way this pit runs. LSG makes both types of offsets and some are horizontal with a vertical chamber at the stack end. More capacity. Both styles have a intake and exhaust and for the most part run identical. It's just a matter of learning your pit and understanding the fire management of it. After a few cooks on any of them, you will learn just how big a fire you need and when to feed it. One thing is certain, if you go with either one, you are going to love it!

Nice pit.!! I had a 20"x 42" custom made pit by pits by JJ in Houston which looks similar.... I'd recommend an ash catching pan in the fire box for an easy clean up... Hope you enjoy it for many years to come!

Thanks, I love it! There is not really a water pan, but instead, the water actually goes into the bottom of the pit if you decide to use water, and I think I will on this cook coming up. It not only stops meat from drying out because of the moister it's adding to the surrounding air, but it helps out in keeping a even heat across the pit, while using the tuning plates as well, so I want to see how it goes, then I'll do a cook without water and see which I like best.

Rus, that is one of the most solid built offsets I possibly have ever seen. A LOT of thought clearly went into the design of this beast. I don't have time to skim through all the comments, so apologies if you've already addressed this...but I noticed towards the end you had your iGrill set out. I'm assuming you had a couple ambient pit probes for some temp checks throughout the chamber? I'd be curious how well it regulates heat throughout the chamber and if you noticed any big variances. Also...like I'm sure some others have mentioned, definitely please try out using water in an upcoming cook and let us know if you think it's needed or not. Amazing cooker brother. I know your AMPING! :)
Steve, this truly is a beast of a smoker and built to take it and to last! Yes, I had two probes in the smoker. Each probe at opposite ends of the lower grate. I used them to see the temperature difference from the fire box side to the exhaust side as I made adjustments to the tuning plates. I got it tuned in with only a 5°F difference, and once I add water to the pit on my next cook, I should see no difference at all, but I can live with 5° difference all day long as is. That's what I love about the tuning plates. If I want a 50° difference I can do it for a hot and cooler side. Thanks Steve, and I appreciate you stopping by brother!

Russ I purchased a 24x40 smoker from Lonestargrillz based on this very video. I’d like to thank you for all of your great reviews and I am very pleased with my purchase. The only thing I’d like to know is your honest opinion on the damper door. I feel it isn’t large enough for proper air flow. I find myself having to open the door slightly or the fire starves for air and I get dirty smoke. Have you experienced this?
Congrats on the new Lonestar Grillz offset! Your going to absolutely love it. Over time, I have learned to adjust my fire size for the heat I'm trying to achieve. I've shown that in other videos since making this one. Once you start your smoker with two to three splits of wood, just feed it a split as it needs it to maintain the range your looking for with both intake and exhaust wide open. They are both relatively the same size which makes for even constant air draw. Every since I've starting doing that, I've had no problem at all maintaining a clean fire with excellent smoke. As with any offset you will experience temperature changes when you add a new split. Don't worry about that, because it doesn't last long and will not effect the cook. It will balance back out. Just leave everything set as you had it before adding the split. Another tip is to put 4 to 5 splits on your fire box top to heat up as your smoking your meat, and as you add one, it will ignite very fast and still produce a clean smoke. As you use one, replace it with another one. If you have any more questions please don't hesitate to ask. Hope this helps.

If you put your coals and logs all the way to the side walls on the back 1/2 of the firebox. You can preheat and dry your next logs to burn on the front of the fire box. Burns cleaner. But you probably know that. Great video. What's the msrp on this baby???
I've actually got another way that I will be doing the logs when I actually have meat in the pit, but yes, that's a great method for getting them hot and thanks! Their website has a sale price of $1,850 or it did last time I looked.

I get the pit up to temperature with 2 splits, and then add a split around every hour to maintain temperature. That is on this pit. Cheaper and thinner walled offsets are not as efficient and can go through more wood. I'm still super happy with mine.

You mentioned couple weeks ago you had one on order. I just found out about offset smokers in January. The first one I found on the web was the Lone Star, then Gator, then Yoder. I really wanted to go big, but ened up with another make, which is built well too, just cheaper. But, as we always heard...you get what you pay for. Yours is top dollar but it is definitely top quality. Every point on the walk thru is nothing spared. Enjoyed your burn in vid, and looking forward to making some good cooks on it. There are a hand full of fabricators that make these custom made grills, and they do cost more, but to me, well worth it and Lonestar Grillz is doing a few things that no other company is doing such as the 1/2" fire grate, and their top lid flanges conform to the shape of the smoker like no other. This grill will last a life time if cared for, like removing ash after every cook, and keeping the fire box oiled down in between cooks as well as the charcoal basket. Glad you enjoyed the video, and there will be many more using this smoker. Thanks Phil!
Hey russ when I worked offshore many many moons ago ppl used to make grills out of pipe for offshore use. 3/4 in., Rebar and flexible grating I think it's called. the grate with the diamond shaped holes like in your grills charcoal basket and the shelf you spoke about. Anyways they were like bad to the bone so I know this is awesome. Steel is a great holder of heat i guess is how I wanna say it. It distributes it holds it very evenly.

When using a stick burner like this..tell me about over smoking. If I'm 6-7 hrs in & fuel is out..as you keep adding wood does it give it too much smoke?
If you leave your exhaust and intake wide open on a offset and manage your temperature by the size of the fire, then you will never have to worry about over smoking meat regardless how long it takes. That's why you have probably heard that you want a very thin blue smoke coming out of the exhaust stack. In some cases, you may even realize that you would like a little more smoke flavor. A offset is a different beast, so forget anything you have ever done using a charcoal/wood chunk combination. It's not the same, but you will love the results off of the offset more than any other smoker. I'm talking from experience and hope you will find out for yourself.

I adjust them to what I'm needing on certain cooks. If I want a constant temp across the pit I move the one closest to the firebox about 1/2" then I space the next one around 1" and the last one around 1.5". It's really something you are gonna have to play around with after you get the pit. Congrats and enjoy

Just asking will the food taste any different the first time sense it's getting season in it?? And I would imagine that the food would taste better and better the more cooks it has???
The better the seasoning of the pit, the better, but it will still be really good as is
Hello from Texas friend, great channel. Just curious ...did you consider a reverse flow and if so why did you choose not to go with one?
+Neal Hamilton I went with a offset because I like the ability to get different temps from one end to the other, and still have the ability to have the same temp from one end to the other, if I want via tuning plates. A back flow doesn't give you those choices. It's designed to run the same temp across the smoker with no real ability to have a hotter side if you need that on some cooks. I definitely made the right decision with this Lonestar Grillz offset. Very happy with it!

I hear the 20" is a good pit, but I'm very partial to the 24" firebox on mine. The 20"x42" should have about the same amount of cooking area as my 24x36, but it's really your choice.

I have watched a bunch of your videos and and being new to bbq my question is why a horizontal offset over a vertical offset and is temperature control the same for both styles thank you your videos are excellent
First, thanks for watching my videos. I guess it comes down to personal preference and capacity needs. The 36"x 24" offset is all I need and I absolutely love the way this pit runs. LSG makes both types of offsets and some are horizontal with a vertical chamber at the stack end. More capacity. Both styles have a intake and exhaust and for the most part run identical. It's just a matter of learning your pit and understanding the fire management of it. After a few cooks on any of them, you will learn just how big a fire you need and when to feed it. One thing is certain, if you go with either one, you are going to love it!
