Pinangat a dish from the Bicol Region which primarily uses taro leaves and coconut milk
This dish is a blend of taro leaves, chilli, meat and coconut milk wrapped in taro leaves and tied securely with coconut leaf.
Pinangat Ingredients
Taro leaves, shredded
10 small piece kanduli
taro leaves (dahon ng gabi)
coconut cream
garlic
ginger
lemongrass (tanglad)
shrimp paste (bagoong alamang)
salt, to taste
siling labuyo (bird's eye chilli), crushed
How to Make Pinangat:
Make the laing: Put together, laing leaves, pork, and kanduli; place on a taro leaf.
In a bowl, combine coconut cream mixed with garlic, ginger, lemongrass, shrimp paste, chilis, and salt ,and pepper. Pour on the laing.
The leaf is then folded and sealed to form a square pouch of sorts. Many of these pouches are made then stacked on top of each other in a pot with coconut milk and lemongrass stalks, and steamed to cook on low fire until fork-tender. cook for 1 hour.

In Quezon Province, where we have tons of coconut trees and taro plants, cooking the "pinangat" has a different version. My mother had two stages of making "unforgetable pinangat". We do not put cut taro leaves, instead, the stem of the taro leaves, after peeling the skin and we mix it with fried pork belly, shrimp paste, spices, a little bit of brown sugar, coco vinegar, and dried fish, and kakang gata. Wrap it and tie it with strip coconut leaf and cook it with 2nd kind of "kakang gata". Cook the wrapped banana leaves and boil them for 2 hours, drying all the liquid. Then, we do another sautee of kakang gata, with all spices, shrimp paste, and cook it until certain percentage of liquid looks like green oil (like olive oil). Put the "pinangat" back to sauteed coco milk and let each package submerge in the mixture and serve with "glowing solid kakang gata" and drizzle with dried sauteed garlic and shallot, and put one or two "siling labuyo" on top and serve. Water should not appear on the serving plate, instead of the green oil. I tasted the Bicolano version of "pinangat and laing" and the taro leaf taste is so strong, and less "coconut milk" and mostly watery. (My brother-in-law, Pavia family, came from Guinobatan, Albay). We let the coconut milk becomes oil, making "laing oil" good for laing fried rice with sunnyside up fried egg.
