As amazing as Bury the Light is, THIS is the Devil May Cry song. It's a love letter to not only Dante but the series as a whole. It encapsulates who Dante is as a character and what the series is about.
The combination of soft choir music and heavier industrial music reflects Dante's dual heritage, the human and the devil. At points they're at odds, with one taking over the other, but in the end they're one in the same working together for a single goal.
Dante initially hated his demonic heritage, blaming all of demonkind and thus his father for the death of his mother, seeking to kill demons out of vengeance. At the same time he neglected his humanity and treating humans callously. He didn't think he was human but he hated the demonic part of him so he acted like a selfish prick. The only reason he fight the invading demons at the start is for the petty reason that he doesn't like Vergil and wants to take a shot at him.
However, as the game progresses and through his interactions with Lady who seeks to kill her father out of a sense of familial responsibility and with his brother Vergil who was bastardizing their father's legacy, he grew to accept that his father wasn't the monster her had made him out to be and that, as the Son of Sparda, it was his responsibility to continue his fathers legacy of protecting humanity, allowing him to accept that he was both human and demon.
This ultimately puts him at odds with Vergil who rejected all humanity for the power demons had even if it meant putting the humans their father worked so hard to protect at risk, forcing Dante to kill his brother to do what was right. If he hadn't cared his brother would have lived but they would still be fighting each other for petty reasons, but because Dante chose to care about humans and his family, he felt he had no choice but to end Vergil's ambitions with his own hands, no matter how painful it would be for him. That is the "Chosen torture" mentioned in the lyrics, the ability to care and love causes him pain, but it also gives him a strength demons inherently lack. That is the thesis statement of Devil May Cry; Humans have something that demons don't, a heart that can love another person. That's why the series is "Devil May Cry", because if a devil can care enough about another being to cry, it shows that they have a human heart.
For the rest of the series, we see Dante as someone that is comfortable with his heritage, taking up his father's sword in DMC1 to avenge his family, comforting Lucia when she fears she's a monster in DMC2, helping a confused Nero accept his powers in DMC4, and achieving a perfect balance of human and demon and reconciling with Vergil in DMC5. He has his moments of doubt and sadness throughout, sometimes wishing he could have a normal life, but he never he never wavers from his ideals. If a demon threats humanity he'll face it down with cocky grin and a massive sword, but he's always willing to let a demon have a second chance to prove they have a human heart, and while there are plenty of demons that refuse, there's always one or two that proves his belief is justified, whether that be Trish, a demon created for the soul purpose of killing him who ends up as one of his business partners and closest allies, or Brad, a demon sent to summon their master that fell in love and worked with Dante to stop them.
This is also why I consider Dante's theme in DMC5 such a failure. It's about his hatred for demonkind and how he feels "Subhuman", but all those feeling were confronted back in this game, which is a prequel. Subhuman is an angry song about someone moments away from unleashing something terrible, but that isn't Dante. He offers mercy to those that want to kill him on the minute chance they have a human heart while showing nothing but disgust to humans that sacrifice humanity for power, seeing those that give it up as worse than those that never had it. Dante considers himself both human and demon, not subhuman.
What's more, it acts as a good parallel to Bury the Light. Both mention light as a way to represent humanity, with Vergil choosing to bury away and hide the pain while Dante sees it as a gift, something to be treasured and nurtured. Both of them contrast with Devil Trigger, which instead is has Nero "Embrace the darkness" of demonkind and finding strength from that. Both brothers are shaped by their views on humanity while Nero is more comfortable with that part of him and is more concerned with his demonic part of him, and he's embracing it. He manages to figure out what took the brothers decades to put together, seeking power to protect what he loves just as Sparda did.
But the title itself is one of the most important lines in the series. "Devils Never Cry" starts out as you'd expect, a statement that devils don't have such weakness, but after accepting that "Even a devil may cry when he loses a loved one" it changes into a condemnation. Devils never cry because they don't care about anything, they're too weak to love anything. If you cry, for love, for loss, or anything in between, it proves that you don't have such weakness. It's a reflection of the series, that if you show the ability to cry it doesn't matter what species you are, deep down you have the soul of a human, and that makes you stronger than any devil.

I like Devil May Cry but i'm always surprised how fans can find much more depth in the characters than i've ever managed to grasp!
The demons having a human heart and caring about people is also very important in the anime, where Dante spares any demons that simply just wanted love with another person

Funny story: if you've played the game before looking for the complete song, the shock comes at the same time, but for other reason, the "soft" part does not appear in the game until the very end, so no one expects it.
The melody for the last one comes out a lot, especially in Lady's scene. I love it.

If and when you react to Subhuman, make sure you react to the OST version by Michael Barr, not the Game Edit one. For some reason the OST version has been buried under the GE one and people mix them up. To differentiate them, the OST one is around 5:10 minutes and the GE is 6:00.

While DMC1 and DMC2 certainly were an aesthetic, DMC3 was where the franchise was born. I cannot tell you the way people felt experiencing DMC3's soundtrack. It was when video games started getting full orchestration, but this was one of the first times we got an OST of this magnitude. It meant everything to fans.

Interesting note- the line “You will never become a Man” can be interpreted a few ways. Firstly, the obvious- Dante is a younger man, and from the perspective of hostile Devils, it’s an outright threat- ‘If you come, you will die’. Another interpretation- and the one that I ascribe to- is that it refers to Dante’s inhumanity. Half Devil, half Man, Dante responded to an early trauma by rejecting his Devil nature. “You will never become a Man”- in other words- no matter what Dante does, he can never truly reject his other half. He can never become entirely human. Which makes the end of Devil May Cry 3 that much more poignant, I think.

This song is still the most perfect ones from the series to understand it musically. Like you say it brings you in with the usual sacred sounding religious music which to me gives the impression of what you fight in dmc being ancient demons from hell. All for it to be broken and desecrated by the industrial music being Dante coming in not playing by the rules and styling on demons and all the like while not taking it seriously. But then comes back combining the two sides as Dante still is part demon himself and as much as a goofball he is does have a serious weight and purpose to his character.
Another song from the same game that's also good is Divine Hate (Battle Theme 2).

I wish you could listen to the OST of the Hell passages in this game (DMC3) they combine the beast like elements with a maniacal loop in the background and then there is an angelic choir at the beginning too, I think this is just what defines the gothic elements in the DMC world and soundtrack. The first three DMC games have this dark, gothic, dark angelic element to it.
AND AND this Hell theme is then developed into a more industrial sound when you hear the battle game against the Chess pieces haha.
Finally, out of one of the best games in the series came some of the most 🔥 bangers that really sets the tone for all the games
dmc 3 is the most memorable game on ps2 since it is one of a few games that really needs to be skilled to clear the game
