Greetings ma’am. Hope you’re fine. There’s one thing about this dish, that I’m still quite confused about. When I followed your steps last time, it the whole dish turned out to be decent except for one issue, which was that the paneer chunks had become too hard and quite rubbery. I remember having to cook the raw pieces in the boiling turmeric water and then pan fry the paneer pieces. Does this particular sequence of steps necessarily lead to paneer ending up being tough and rubbery? At least that’s what I think. What if the steps were to be reversed, meaning frying them first and them into the boiling turmeric water? Of course, the oil would be released into the turmeric water. But we could upcycle it for prepping the base of the tomato gravy, later on, could we not? This way the paneer would be soft and tender, which is what you need if you have to eat it with rice. Please feel free to point out if I’m wrong about this or if I’m assuming a lot of things. Is the end-dish supposed to have tough pieces of paneer, taking into consideration that it is traditionally eaten with rice? Please clarify these points, sequentially. Thank you.
