There’s a special kinda beans that’s called frijoles puercos which is basically refried beans chorizo jalapeño and cheese. Very hard to find but 10/10 worth it
To me, the key to a great bean/cheese burrito is that the refried beans must be FULLY blended, super creamy & of a slightly thinner consistency- just thin enough that one needs to keep the burrito in the wrapper for some structure while eating it. I also basically never use salsa on/in a burrito, because it’s usually thin/watery and often ends up causing a burrito blowout. I use hot sauce instead. White sharp cheddar is my go-to cheese for a B/C, and I think an orange habanero hot sauce tastes best with them- something like Mexico Lindo Habanero or Yellowbird Habanero 🤙🏼

I can make the best bacon bean and cheese burrito fire. So delicious. And when I say fire, yes, Roasted chopped up jalapenos goes into my beans. Fried up crispy bacon goes into the beans. A load and load of cheese goes into the beans. Warm up your tortilla on the stove right onto the burner, and there is no need for a hot plate. Got gas stove, electric it all still works. But watch that tortilla it can easily get burned and get charcoal. I've done it so many times. It's cause I wasn't paying attention. Load your beans onto that tortilla, add more cheese, wrap it up, and you're good to go. Make 2 and your full.

The flour tortilla and cheese that they use isn’t as big of a deal as that step, if they simply refry the beans in regular oil, then yeah it’s not going to stand out. Best bean and cheese burritos at least here in the sgv are from pepes, I like the Baldwin park location, and the Alberto’s on peck rd in El Monte, tacos los mismos in El Monte next to El Monte high school makes a good one also, they have a chicharron flavor to them, creamy, nice and greasy, just the right amount of salt, not bad at all.
