What a French Laundry Alum Does With His Own Menu

  • Chef Tim Hollingsworth spent 13 years at Napa, California's The French Laundry-rated one of the world's 50 best restaurants per S.Pellegrino-and represented the U.S. in the prestigious world cooking competition the Bocuse d'Or in 2009. He decamped from Northern California two and a half years ago with plans to open his own place in Los Angeles. Inspired by the food he grew up cooking and eating in Texas, Hollingsworth gave Studio City a barbecue joint last year, intending to launch a more serious restaurant with local restaurateur Bill Chait.
    And now the wait is finally over. Los Angeles' most anticipated restaurant to open this year, Otium, is finally ready with dinner service after soft rolling lunch late last month. While Otium isn't a fine dining restaurant by conventional standards-no white tablecloths or tasting menus here-it certainly is a restaurant that takes food and drink seriously and, by Los Angeles standards, Otium is one of the city's more proper restaurants.

      it is charcoal because he's putting it at the bottom. He wouldn't put food at the bottom of the dish it would go to waste.

    I died a bit when she said the nori adds umami. What is up with people throwing in umami to make themselves sound cultured? Japanese people would never call that umami

      Yeah they would. It is considered 旨味 in Japanese. Maybe they're trying to sound cultured but Nori does add umami to dashi and you can dehydrate it, blitz it and use it as a powder. FYI I work as a Chef in Tokyo so not trying to come off as pretending to be cultured haha. Hope that helps.

    She is getting better, her early work was terrible but I think she's starting to understand what viewers want to hear.
    I understood a lot more about what he was trying to do than other videos, where she dropped buzzwords constantly.
    That voice though... You know, like, whatever....? Just who she is, my issue not hers.
    I wish her well in her future endeavours.

    I can't tell what I'm more annoyed about, her interjecting MHMMM OKAY UHHHH every five seconds while the chef is trying to explain, her trying to talk with her mouth full of food for half the video or that hideous see through animal print shirt she probably stole from her grandma's closet paired with a white tshirt bra (really?! a white tshirt bra?!)

    Seriously, stop saying UMAMI excessively ... it’s annoyingly pretentious. We have a word for it ... it’s savory ... the only reason food VLOGGERS (not even chefs) over use it alot is for the sake of appearances and sounding sophisticated. Seriously learn how to poach eggs properly first.. then fake it.

      I disagree. She def. knows what she's talking about, there is a reason why one of the best chefs (Mike Bagale) is her Bf. I bet she has more experience on how things should taste than most chefs
