What a French Laundry Alum Does With His Own Menu
Вставка
- Опубліковано 8 лип 2024
- Chef Tim Hollingsworth spent 13 years at Napa, California's The French Laundry-rated one of the world's 50 best restaurants per S.Pellegrino-and represented the U.S. in the prestigious world cooking competition the Bocuse d'Or in 2009. He decamped from Northern California two and a half years ago with plans to open his own place in Los Angeles. Inspired by the food he grew up cooking and eating in Texas, Hollingsworth gave Studio City a barbecue joint last year, intending to launch a more serious restaurant with local restaurateur Bill Chait.
And now the wait is finally over. Los Angeles' most anticipated restaurant to open this year, Otium, is finally ready with dinner service after soft rolling lunch late last month. While Otium isn't a fine dining restaurant by conventional standards-no white tablecloths or tasting menus here-it certainly is a restaurant that takes food and drink seriously and, by Los Angeles standards, Otium is one of the city's more proper restaurants.
Above, Eater's Kat Odell stopped in for a first taste of Hollingsworth's rustically polished, share-friendly dinner plates flavored by his worldwide travels.

best thing about this video is over hearing someone sneezing and an enthusiastic "bless you" z
Nori crusting! Just like in the final plate Netflix show. Definitely made it seem like that was his partner’s decision in the episode! So smart
nah he said it in the beggining to crust it in nori
Great to see Chef Hollingsworth doing well on his own terms.
That was a great visual of his menu, thank you.
This restaurant looks absolutely amazing
brown.. warm.. so comforting..
Im liking this just for the food and the chef.
Chef Timothy is a BOSS!!!
omg this place looks so good
one of the best food channel in UA-cam
I don't know what's wrong with the comments but I like Kat Odell
Bazinga! That food looks amazing
Been binge watching Munchies and Eater for the past couple days.
Wow, crazy delicious looking.
Welcome to UA-cam, where everyone's sour lol. I personally loved the piece!
For real like the blondie was very engaged people are just bullies lol
Congrats for the winner of THE FINAL TABLE
Congrats chef for winning the Final Table
Congrats Chef :)
Good commercial looks delish
LETS GO CHEF!
Wow. would love to eat here someday.
+Headbanger's Kitchen The traffic problem its entrance causes on Grand Avenue in LA is sad. Poor city planning.
Damian Rhea well for now I'm far away in India :P
Headbanger's Kitchen Bon Appetit to you in India! :)
Damian Rhea THANKS ;) Do check out my channel if you got some time
What is the music in the background?
I like how he says "Tomatoes are very California" like nobody else grows or eats tomatoes.
+Landon Bubb avocadoes
Learn how to spell tomato
He won the final table he sure now is famous
anyone knows the song they used?
He's in The Final Table on Netflix, check it out. He goes far...
you mean he won?
You mean he goes far in a rigged competition? Ok
I hope this place is Michelin, cuz' the food is more creative and looks more appetizing than many other Michelin starred joints
Professionally trained chef has to stand and listen to someone's uneducated opinion. lol
what song @ 0:49 so fye
2:53
"IM GONNA EAT IT ALL"
Chef: stares at her with disappointment
Phillip Zhong k
Hey that's the guy from final table
I was busy listening to the chef. I didn't notice all the annoyances until I read the comments.
right? lol
What were the annoyances?
We're going on a trip,
with our favourite acid shit
tripping out on tomatoes,
and finishing on fish.
lmao the acid comment.
Anybody else notice the chef dropping the food when taking it from the oven ? ;-) ... around 2:46 :-)
Looks like he dropped charcoal. not food
it is charcoal because he's putting it at the bottom. He wouldn't put food at the bottom of the dish it would go to waste.
OMG! Like for real like totally.
"i like anything raw" wow great food journalism
One way to make a dish very California is to put apple in it. Do you get it?
Why this lady suddenly become food critics
I died a bit when she said the nori adds umami. What is up with people throwing in umami to make themselves sound cultured? Japanese people would never call that umami
That's exactly what it is...making up words and terms to try to elevate themselves
Yeah they would. It is considered 旨味 in Japanese. Maybe they're trying to sound cultured but Nori does add umami to dashi and you can dehydrate it, blitz it and use it as a powder. FYI I work as a Chef in Tokyo so not trying to come off as pretending to be cultured haha. Hope that helps.
Came here after The Final Plate
MHM
when is she going upstairs to look at some scrips
::cuts off Chef: "Yeah, yeah, yeah...." 50x
He is my uncle
can you please script her responses to the food just like her saying the intros are? or just feed the food to a dog either one will make it easier to watch
No meat on the pastrami sandwich - oh wait fish isn't meat is it? Is it!?!
seems everyone has a problem with hosts in this youtube channel. except lucas ofcourse, he seems to be a nice guy.
She is getting better, her early work was terrible but I think she's starting to understand what viewers want to hear.
I understood a lot more about what he was trying to do than other videos, where she dropped buzzwords constantly.
That voice though... You know, like, whatever....? Just who she is, my issue not hers.
I wish her well in her future endeavours.
Remind me NEVER to, like, watch any other video with Kat Odell. When she used the word 'umami', I, mmmm, threw up a little in my mouth.
+Ted Ray why?
I don't understand why you don't like the word umami?
Sounds like a personal problem.
Hmmm huumuum hum huhuum , okaaay , huumm huum, umami, huuumhuum okaaaay huuum.
My thought process on plating a dish. Pile that shit on there thick and high and eat every god damn bite of it.....
Right off the back she says “ I love anything raw”.............. I bet you do girl I bet you do. Guarantee she slide into Tim’s DM lol
There is a sucker born every minute!
Since if you want everything raw, I got something for you
That's sexy looking food.
talk about a bad acid trip...the critics the professionals. have to put up with. If only you could hear what he was truly thinking.....hmmmm

She was annoying, but I have been to this restaurant and it was amazing.
Open. See her face. Click pause. Comment angrily. Press bac.....
Shes hoootttt
@1:50, she interrupts the chef describing the food to eat with her 'yeah yeah yeah'. despicable...
this broad prolly also uses phrases like fruit forward and forest floor to describe wine.
no mames
1:00 "What is your inspiration behind this dish?" Pretentious people and a desire to make lot of money off of them.
Every thing she says is a question
I came here from Dnews to see nothing, but unhealthy junk.
+zukodude487987 Thanks for giving us a look. Sorry this video wasn't for you. maybe, gives this a try: ua-cam.com/video/u468xY1T8fw/v-deo.html It's about lab grown meat and the future of food. As a DNews fan, I think you'll like it.
Eater Why aren't they on sale yet if they are already at a marketable price? Not to mention why don't most people already use mock meats that have been around for decades? They don't taste like cardboard anymore.
+Eater what is the intro background music you guys used? i love your videos
The intellectual side of this food is amazing, but this experiment food just doesn't do anything for me
shes pretty bad.
I can't tell what I'm more annoyed about, her interjecting MHMMM OKAY UHHHH every five seconds while the chef is trying to explain, her trying to talk with her mouth full of food for half the video or that hideous see through animal print shirt she probably stole from her grandma's closet paired with a white tshirt bra (really?! a white tshirt bra?!)
So how should it be worded instead? I didn't insult her intelligence, use slurs or swears, and the only big issue I had was with that horrifyingly bad fashion sense. Should I preface it with a "trigger warning: personal opinion that isn't positive!" or something next time?
cpunching lol? What's wrong with what she is wearing? And how does that affect anything you crazed feminist?
Smug Girl is SO annoying
Pretentious horseshit.
this woman is so hate-able. Lord help me.
first time watching this host.. so boring, nondescriptive and unexcited
meh food
Terrible interviewer.
Seriously, stop saying UMAMI excessively ... it’s annoyingly pretentious. We have a word for it ... it’s savory ... the only reason food VLOGGERS (not even chefs) over use it alot is for the sake of appearances and sounding sophisticated. Seriously learn how to poach eggs properly first.. then fake it.
I disagree. She def. knows what she's talking about, there is a reason why one of the best chefs (Mike Bagale) is her Bf. I bet she has more experience on how things should taste than most chefs
