- Probably the most difficult challenge #schoolofchocolate!
It’s composed with a rum soaked baba, a vanilla and coconut mascarpone whipped cream and an exotic compote topped with genuine gold flakes.
Making this dessert the perfect pirate treat! 🏴☠️ 🦜

I love this guy, because with all of the cakes that look exactly like real objects it's usually just all fondant and one tiny piece of cake (not that those people aren't talented! but less thought is given to edibility it seems), and with him he always gives thought to flavors and how it will taste and incorporates it into everything. like, I'd LOVE to taste that. it's so cool to see.

The mango/pineapple coulis must be amazing. I wouldn’t have thought of putting vanilla in it. Fabulous!

Your attention to flavors and detail is out of this world. I’ve been in the restaurant business for 25+ yrs and I’ve yet to see a pastry chef with your ability. And I worked at places like Disney and Norwegian Cruise Lines. Your understanding of flavor profiles blows me away EVERY time. Congrats on your success.
