    I have received requests for flaxseed bread for some time now but haven't got to do it until recently when my friend, Edward Yip tried it using my black sesame buns recipe but replacing it with ground flaxseeds and it worked. So, I gave it a try with a slight tweak to improve on the rise and texture. Thank you, Edward, for sharing with me.
    Most of the carbs in flaxseed is fiber. Hence, the net carb content is very low. Flaxseed is a good source of plant based fatty acids. The main difference between golden flaxseed and brown flaxseed is that golden flaxseed has fewer calories and fat but higher protein content whereas brown flaxseed has more calories and fat. In terms of taste, brown flaxseed has an earthy flavor while golden flaxseed has a nutty flavor and taste better. In terms of color, I think that golden flaxseed has a more suited color for bread. Despite this, you can still use brown flaxseed if you do not mind the darker color.
    These keto flaxseed buns actually taste quite neutral to me. They are light, soft, fluffy and crispy when toasted. The most important thing is to make sure that the flaxseeds are ground until a powdery texture otherwise, the buns wilI be denser.

    NUTRITION INFO PER SERVING
    Total Carb = 15.7 g
    Dietary Fiber = 13.6 g
    Net Carb = 2.1 g
    Calories = 232
    Total Fat = 11.9 g
    Protein = 10.6 g
    DRY INGREDIENTS
    Golden Flaxseeds = 150 g / 1 1/4 cup (Finely Ground)
    Whole Psyllium Husk = 18 g / 2 tbsp (Note: The psyllium husks must be ground until half its original volume then weigh it. This is important as it will absorb the water more effectively and this is actually more suitable for baking. However, if you are using pre ground psyllium powder, only 1 to 2 tsp is required. Please see this video about psyllium husk and powder for better understanding and success - • PSYLLIUM HUSKS VS POWD... )
    Baking Powder = 8 g / 2 tsp
    Salt = 1/2 to 1 tsp
    WET INGREDIENTS
    Eggs = 4 large egg whites (153 g) OR 2 whole eggs {The protein from egg whites helps to boost the rise while fats from the egg yolks hinders the rise. Hence, it is highly recommended to use egg whites)
    Apple Cider Vinegar = 30 ml (2 tbsp)
    Hot or Boiling Water = 100 ml (1/4 cup + 2 1/2 tbsp for self-ground psyllium husk)
    = 50 ml (3 1/2 tbsp for pre-ground psyllium powder)
    DIRECTIONS
    1. Preheat the oven at 350F or 180C.
    2. In a bowl, mix all the dry ingredients until well combined.
    3. Add all the wet ingredients and mix until a dough is formed. The dough using psyllium powder is much softer but still manageable especially after kneading.
    4. Knead the dough for a while.
    5. Portion the dough at 90 g each. The ground psyllium husk dough will yield 5 buns while the psyllium powder dough will yield 4 buns. Of course, if you make them smaller, you will have more buns.
    6. Wet your hands as the dough is quite sticky. Shape into a ball and place on a baking tray lined with parchment paper.
    7. Top with any of seeds, nuts or herbs of your choice (optional).
    8 Bake for 30 mins or until golden brown. The buns are done when they feel light to the touch and sound hollow when you tap on their sides.
    9. Cool completely
    10. These buns can be stored at room temperature for a few days if you have a cool and dry climate otherwise, it's best to refrigerate them earlier. They can be refrigerated up to 1 week and frozen for months.
    11. These buns can be reheated by toasting or steaming.
    12. These buns are crispy when toasted. You can even slice them into 3 pieces as they are quite thick due to the good rise.

    I love these buns. I have celiac disease, and though I’ve mastered baking bread, it’s so nice to have a bun again. My husband who doesn’t have to be concerned about gluten enjoys them too.

    I have just made these . They are great . I made 6 buns , used 1/2 tsp of yeast instead of bp and 2 whole eggs. I sliced 1 into 4 mini slices topped each slice with spinach, pepper jack cheese , avocado and sliced ham . OMG , they were filling to the max. Thanks 🙏 for this recipe. 👏🏼💝💐❤️🌺

      If you mean loaf bread the ratio will be different. Usually you can turn loaf bread into buns but not the other way around. But you can still try it out. I will be working on the loaf bread recipe and if successful will publish video soon.

    Buns have been my favorite but due to the ingredients cannot have it but your recipe helps to have it guilt free. I really liked how you use flax seeds in this delicious dish.       Yes you can use brown flaxseed but just ensure you grind it until powdery texture so that the buns will have that lighter and softer texture. Unfortunately, I am not sure how you can enhance the darker color but it should look fine in its natural color just like how black sesame buns would look black hehe... As for the taste, it's more earthy which should be fine if you like flaxseeds. Maybe you can add some herbs. Of course, golden flaxseed is the best.

    First, I want to thank you for the wonderful recipes!!! I don't know where the first part of my question went (see below). My problem is that I use a scale to measure grams of psyllium husk, not powder. Then I grind it. The NOW Brand says that 10g equals 2 Tablespoons. So I'm not sure which measurement to use 18g or the 10g equaling approx 2 tablespoons.
    Your recipe says 18g equals 2 Tablespoons. What should I use 18g or 10g or the 2 Tablespoons. Also, I measure the psyllium pre-ground? Should I measure after it is ground? My rolls do not rise and they are a little dense not fluffy, but taste great. Just trying to improve. THX

      You're most welcome! It is best to weigh the ingredients for accuracy as not all cups and spoons are the same everywhere. After you grind the whole psyllium husks until half its original volume, then weigh it for 18 g according to the recipe. Please check out this tutorial video for a better understanding and success.     Does it make a difference if we use whole eggs and not the whites? Mine are more dense and I only get 4 buns out of the batch, so I'm thinking it's the whole eggs. I follow the recipe and use the correct psyllium husk. I have the golden flaxseed meal and ground it to a finer texture. Thanks for the recipe!! :)

    love your recipes. Question on the psyllium husk. I have Now Brand Psyllium Husk, not powder. Do I measure the 18g and then grind and use or do I measure after they are ground? My info on the container says that 10g is about 2 Tablespoons where as you sa that 18g is about 2 Tablespoons. My buns do not rise and are not very fluffy but they taste good. So I think I am using too much psyllium.

      Thanks! Please weigh after grinding. Yes, too much psyllium husks will make the buns denser, wetter stickier, and unable to rise. Not all spoons and cups are the same everywhere so that's why I always emphasized the importance of weighing the ingredients for accuracy.

    It was a semi success. My bread rose but the middle section didn’t do so well. Basically, my bread had a neck. Any thoughts as to what I did wrong. Upper tasty tho. Best keto bread ever! Despite the neck....

      I am assuming that you are referring to the loaf bread. The neck is most likely caused by a smaller pan. This happens when you're using a 8x4" pan. It wf be better to use a 9x5" pan but place the dough in the middle and do not spread out throughout the pan. Leave the top round and it will rise more evenly as the bottom is wider.

    Thank you so much for the recipe! I made these buns today with golden flaxseed (pre ground, plus extra grinding in the blender) and they turned out pretty good in terms of volume and softness. I notice however that there is a bit of a bitter after taste, which is specially noticeable in the crust. Any ideas what could cause this?

    Fantastic rolls, they taste just like wheaten rolls, so will satisfy anyone who misses them.
    But every time we make them they are a little bit moist in the middle.
    We use 2 tsp psyllium powder and 50ml water.
    Should we use less water?

      @@deesam695 Did you grind the husk until half its original volume before using? This is important as it will absorb the water more effectively. It's best to use a coffee bean or spice grinder or multi grinder

      Also when I make an omelet I add an egg yolk to two full eggs. I think I will try a making a quiche with them, but I haven't researched a suitable Keto base for that.

      You can add sweetener. Unfortunately keto friendly sweeteners does not have a compound to crisp up the bread when toasted unlike what sugar can do. But if you don't mind this then feel free to add sweetener to your taste.

      I do have quite a number of yeast bread so you can check out the playlist. Unfortunately, I can't make all of them yeast bread as it is too much work and not everyone appreciates yeast bread. Also, with non gluten flour even with yeast we still need to add baking powder as they do not rise as much as regular bread.

      @@rdg1913 No worries! You can probably get from Amazon or any online companies. It's the best thing i ever bought and affordable too. I grind all my seeds, nuts and psyllium husk with it. And because the capacity is bigger I can grind more at one time and I usually grind in bulk to store in fridge or freezer. Grinding seeds and nuts myself saves me a lot of money 😊

      In basic terms, net carbs here are the total carbs, minus the (insoluble) dietary fibre (or in some other recipes, also minus the indigestible sugar alcohols, although some of these are very high GI so do your research). In other words, net carbs are the resulting carbs that your body can fully digest into glucose.

      These buns are light and airy. I believe you need to use bread that have tighter crumbs or are denser in order to soak up all that juices so you may want to consider those bread that are made from almond or coconut flour as they are a lot denser than other low carb flours. Eggless or vegan bread are also dense so you may consider those as well. Feel free to check out the playlist for BREAD which has over 100 recipes.

    How are ground psyllium husks and psyllium powder different? I used husks that I ground in a coffee grinder and thought, that this in fact would be the same as psyllium powder. Or is powder in this case the whole (ground) psyllium, uhm ... "seed"?

      What you're doing is correct by grinding the psyllium husk until half its original volume before using so that it will absorb the water more effectively. Psyllium powder are commercially ground hence its super fine and more concentrated that's why only a small amount is required.

      It's Long Plus and I think its from China. Bought it via Lazada Malaysia at a very reasonable price. I highly recommend it. I have not tried grinding almonds but I have ground walnuts, pecans and hazelnuts. As these nuts have high fat content, it's quite hard to grind until a flour consistency as they will easily turn into butter. For commercially ground ones, they press the oil out first then grind the leftover cake into flour.. For walnuts and Pecans, I have to add some coconut flour so that it can absorb the excess fats but it will still end up slightly coarse which is fine for making keto bread. For seeds its a lot easier to grind until a finer texture.

      No, the psyllium husk is an important ingredient as it acts as the gluten to hold everything together and provides elasticity to shape the dough. It also makes the bread more bread-like

      Yes you can except the bread will look darker. Remember to grind it until a finer texture before using. It should be finer than the meal texture but not flour texture

    I don't know why this recipe didn't work out well for me, the consistency of the rolls are dense inside there were not air bubbles like yours, maybe my measurements were incorrect, one question when you measure the flaxseeds like 150g are they in their whole state then grind them, because I bought ground flaxseed and measure from that 150g maybe it is incorrect, while I was making them the dough was pretty heavy and not soft at all, please help I really want to make these rolls properly

      @@ruthketo3167 OH no that is too much. I8 g is for self ground psyllium husks as mentioned in the description box. I also mentioned that if using pre ground psyllium powder you need a very small amount only. Start at 1 tsp (4 g) and if dough is too wet then add a tiny more just until the dough can be shaped. It may be soft but it's ok because if you add too much the buns will be denser, wetter and stickier.
