Just a friendly tip. Might want to switch to a bottomless portafilter and use a shot mirror to help you improve your extraction. That'll also help you improve your puck prep as the bottomless portafilter will tell you if there is any channeling during the extraction.
Also, use the WDT to distribute the grounds evenly, not just to remove the clumps. I noticed at 5:50 that the grounds were not properly distributed and you kept on tapping the portafilter to even it out. This might have caused some channeling as you can see during the extraction, espresso came out on the right side of the spout first. You would want the espresso come out of both sides of the spout at the same time.
WDT evenly > Tap once or twice > use the other distribution tool > tamp
Bottomless portafilter always looks so good in other people's videos. However, I read that it would be messy if the puck prep is not good. So, I'm trying to get good at it first before switching to bottomless. But that's a great tip! I was thinking why it's not even after breaking up the clumps. Next time I will try using the WDT to even out more before using the distributor. Thank you! - Jon
Don’t think that your grind size is too fine just because it pulled your desired ratio a little slow. The coffee I have right now I have found to be most enjoyable at a 1:2 ratio in about 35 seconds (starting when the pump starts). The whole 1:2 in 20-30 seconds thing is only a starter guideline and won’t be the key to great coffee.

Anyway how does it taste? Is it overextracting?
From watching the video, It looks like you did both excessive tapping and tamping. I can see from your POV that it looks like you're giving it your all to tamp that portafilter 😂 . This can leads to channeling and over extraction. You can try reducing the tamping pressure or get a calibrated/palm tamper which imo is a great upgrade to buy.
Also in the long run tamping like this can cause wrist pain, I once went to the doctor because of this 😂
Thank you for the kind words! I will try to include comments on the taste next time. Hahah I am still trying to figure out the angle and amount of strength to use for tamping. Maybe I should look into getting one of those calibrated tamper. Probably have to find out the best way to hold the tamper too. Thanks for the tips, and thank you for watching it daily! When you pull consecutive shots where you just changed one variable I highly recommend you try a sip of both the espresso shots to understand how the flavour changed!

Also just a couple thoughts from looking at your work flow. I would look into replacing your WDT tool and dosing ring. The needles are too close together, effectively stirring the grounds as opposed to breaking up clumps and distributing, the dosing funnel should sit on the edge of the portafilter and not make the ring around the edge of the basket. The ring kind of messes up the distribution and negates the WDT. When tamping I like to do a little spin to polish the puck, but you shouldn’t apply pressure when you do that, just use the weight of the tamper.

Taste every shot! Hard work went into making those beans - when I get a shot I’m not fond of I use it in other foods or baked goods to limit my waste. Thanks for the video and have fun on the journey!
