The others couldn’t see that bc they are ‘takers’. In the scene where Margo is in his house, there’s a pic of Chef flipping burgers, looking very happy. When she ate burger and was satisfied, there was no need to kill her. The menu could only be complete if he killed the ‘takers’ because they’ll never be satisfied (which ruined his love for serving). Plus, taking your food To Go is part of the service experience. Therefore she kinda had to leave in order for The Menu to work. At least that’s my take on it. Good reaction!

Tyler is such a POS, not only did he willingly condemn Margot/Erin, but he had the opportunity to warn the other 10 people before they got on the boat. He was willing to let 11 people die just to experience his gourmet chef obsession. Granted, some of them may have blown him off as crazy even if he had tried warning them. But, he had the chance. He was the worst of them.
It's even worse. There is a note in the script that Tyler sincerely believed if he could get Chef Slowik to like him, Tyler would be allowed to live. That's why he was desperate for appreciation and was dissociated from the other events all evening.
Erin saw the picture of Slowik smiling. The only picture of him smiling. And he was making a hamburger. So the only time he was really happy was when he wasn't a well known star chef, but when he was a simple line cook. She created a scenario where she basically dommed him into reliving that happiness of cooking a simple burger for a happy customer instead of making fussy dishes for people who have zero appreciation for them. And he realised what she was doing probably, but he has to appreciate her doing her job, creating a scenario for her customer and giving them what they want. And he cares about being a good customer, so he should have to pay her for her services. She asked for her life, and he gave it to her. Personally I think, the reason the other guests don't fight back is tied to the MLK quote. These people have never once been a little bit oppressed, they don't know the first thing about fighting for survival, or for rights, or for anything, they have led such privileged lives that they can't even fight back when needed. Erin on the other hand knows what it means to be working class, to work in the service industry. She fights back.

This is meant to be taken as Chef throwing down the gauntlet. Amuse Bouche - More foreshadowing. Charred lace - crater. Milk snow - ash from the fire. Cucumber and melon - the guests. The Island - Scallop on a rock - Chef presenting himself to the guests. Plants - "in the weeds" Breadless bread plate - straight up snarking at picky customers. But you can also make a case for Lilian's plate having a broken emulsion on purpose as his way of saying SHE'S as useless as a broken emulsion. Memory - Self explanatory The Mess - Pressurized vegetables - literal pun. Bone marrow - blood. Beef jus - sweat. Potato confit - tears. Man's Folly - Plum vinegar exists because of Umeboshi, whey plays a vital part in making yogurt, sea kelp and lettuce are what keeps the oceans biome from wreaking havoc. But everyone either doesn't know that or forgets, because they don't taste good, aren't as attractive, or can be very difficult to work with in their natural form. It's the same with women, especially when they try to speak out against unfair treatment like what the chef describes. They get called things like "bottom feeders", like crabs. Final scene with Margot/Erin eating the cheeseburger - She didn't care about giving him peace of mind. She just wanted to survive. And Chef acknowledged that. Using his menu as a napkin - She never believed anything he said for one second. She is, in fact, a taker that knows her worth. And that's why she lived.
