Hey Rip - although the ‘this in place of that’ can justify some not so great foods, but I don’t think you can tell the average person that oil is ok and they’ll only have one tablespoon. Not to mention the other hidden oils in everything else people are eating. Just eliminating it is a better idea.
Mathew was clearly more reasonable and stuck to the overall body of evidence. Ultimately that's what generalized recommendations should be based on. The opposing argument seems to rely on hiding the truth in order to get better adherence and in turn better results. Not a fan of that strategy. I'm all for better results but people should be given the power to make informed decisions. Kudos
About polyunsaturated oil doing better than whole grains, I have to wonder what kind of whole grain? Because what people call whole wheat in the US is really not whole grain at all. And maybe there are other problems with certain whole grains, like pesticides, gluten, etc. I also wonder, is there a U-curve? Because if oil lowers risk of heart attacks, where's the upper limit when that is not true anymore, and how would grains be doing in comparisons with a higher amount of oil? Or how would a higher amount of whole grains be doing when compared?
The oil lovers... unfortunately use it as a justification to cook in a certain way. It is a taste preference... not rooted in reversing Coronary artery disease.
