Today I offer you 3 delicious aubergine recipes that you absolutely must try! The first recipe is pan-fried aubergines with peppers, garlic and soy sauce. This dish is totally vegetable, perfect for lunch or dinner. With very few ingredients and in a few minutes you can prepare very tasty aubergines! The second recipe is a real pleasure! Aubergine flan with mushrooms and cheese. Perfect dish as a side dish or a second course for lunch or dinner. Your family will love eggplants made this way! Dish full of flavor and is suitable for vegetarians! Your family will love it! The third recipe is pan-fried aubergines with tomato sauce and Parmesan. You can enjoy them with a tortilla, piadina or bread. A few simple ingredients and very little time are enough to prepare this nutritious, satiating and very tasty dish! - 2 eggplants
- 3 cloves of garlic
- 1 small pepper
- 3-4 tablespoons of corn starch
- 3-4 tablespoons of soy sauce
- Half a teaspoon of sugar
- 1/3 cup of water
- Salt and pepper
- Oil

- 2 eggplants
- 300 g of mushrooms
- 2 cloves of garlic
- Parsley
- 100 g of cheese
- Parmesan to taste
- Breadcrumbs to taste
- Salt and pepper
For the sauce:
- Olive oil
- 2 cloves of garlic
- Parsley
- Chilli with herbs (optional)

- 2 eggplants
- 3-4 tablespoons of wheat flour
- 1 clove of garlic
- 1 carrot
- 2 spring onions
- 7-8 cherry tomatoes
- 400 ml (1 lb) of tomato puree
- 40 g (1, 1/2 oz) of Parmesan
- Salt, pepper, chilli
- Olive oil

I am from India. Thanks for the recipes. Nice cooking of brinjal in many ways. 👏👍👌. I personally fell that the first and the last ones are the best. We in Andhra Pradesh state of India make brinjal curry in many ways. The simplest of all is to fry brinjal pieces as shown and add a paste made out of sufficient green coriander leaves, green chilies as per the taste and salt and fry. Easy and delicious. The other easy dish is to add a paste made using ginger, dry red chilies and salt. Both the dishes are delicious. But tastes differ from place to place, but some are universally accepted. Still one can try.
