Fall Inspired Sheet Pan Maple Dijon Sausage and veggies
Ingredients:
1 package of smoked Chicken and Apple sausage, sliced into 1/2-inch thick slices
2 sweet potatoes, peeled and cut into 1 inch cubes
16 oz. brussels sprouts, trimmed and quartered
1 medium red onion, roughly choppe
2 tablespoon minced garlic
2 tablespoons olive oil
1 teaspoon Italian seasoning
1/2 teaspoon salt and freshly ground black pepper
1 tablespoon chopped parsley
Sauce:
1/3 cup pure maple syrup
1/3 cup Dijon mustard
Directions:
Preheat your oven to 400 degrees. Spread your diced Sweet Potatoes, and quartered Brussel Sprouts onto the plan in a single layer. Drizzle Olive oil over your vegetables and stir them around to coat them evenly (this will also coat your pan). Sprinkle Italian Seasoning over your oiled vegetables along with Salt and pepper to taste. Place in your oven for 20 minutes or until your vegetables begin to soften. While your vegetables are cooking, make your sauce. In a large cup or bowl (I used a measuring cup as it’s easy to pour) mix your maple syrup with the Dijon mustard and set aside. Remove your sheet pan from the oven, add your red onion, chicken sausage, and garlic then drizzle overtop of everything. Place back in the oven for 15-20 more minutes or until your potatoes are soft. Remove from the oven, sprinkle fresh chopped parsley over the pan and serve with rice.
Salisbury Steak Meatballs:
Ingredients:
36 oz. bag of frozen meatballs
1 Tbsp olive oil
3 Tbsp butter
1 large yellow onion Sliced thin and long
2 cups beef broth
1 Tbsp Worcestershire sauce
1 Tbsp Garlic
1 Small can mushroom pieces and stems
1 Tbsp Ketchup
2 Tbsp cornstarch
Chopped parsley for garnish
Directions:
Heat olive oil in a large skillet and add meatballs. If using frozen meatballs, you may need to cover them with a lid to ensure they are fully thawed without burning them (I also added about 1/3 cup water to the pan to help steam them). Once your meatballs are fully cooked remove them from the pan and set aside. In a medium bowl, whisk in your beef broth, Worcestershire sauce, Ketchup, garlic, cornstarch and set aside. Add butter to your pan. Once melted, add sliced onions and cook until they are slightly softened. Add in your mushrooms along with garlic and continue to sauté for roughly 4-5 minutes. Add beef broth mixture and continue to cook until broth thickens. Add cooked meatballs back to the pan and toss them around to evenly coat them with your sauce. Serve with your choice of mashed potatoes, egg noodles, or rice.
