Right after you complete the trace, the background is grouped with the foreground. You should be able to right click the grouped image, click "ungroup", then click off of the selected objects(deselect them). Then you should be able to select the background by itself by clicking on it, and then hit delete on your keyboard. If that doesn't work, reach back out and I'll try to help you get it figured out.
Depending on the project, yes. If you're cutting blank space it doesn't matter, but if you're cutting directly onto a printed area, that definitely helps you avoid white space when the cutting is inevitably off by a fraction of a mm or so. I try to do most graphics with a contour that is a bit larger than the design for 2 reasons. 1) To avoid the appearance of blank space 2) To avoid the potential for curling of the vinyl that sometimes happens when cutting printed graphics.

At about the 9:56 mark you deleted the background from the image, but how did you do that?
