In WoNY those projects have been removed. Unless they still show up for those without the expansion, you are good selling them, now.

Ive never had to donate any of those materials before theyre just adding up in my inventory
After level 40 it looks like these projects may have disappeared. They used to sometimes be daily projects for either the Theater or Campus. Most of the items were ready to get, but some, like toy cars, insulin, gold bracelet, etc. were much more rate to get and only came from specific types of potable objects.

If you have the expansion, they've removed those projects for level 31 and higher. They may still be there for those doing level 30 with no expansion, though.

They got rid of those projects from what we can see, with the expansion. So you should be good to sell them, now.
