Thank you for sharing this intimate, but very detailed carving class. That is a piece of art!

i love the sound of the "ring" when you strike the mallet/chisel to the mantel.

Not seeing a sample of your work and the detail, it is difficult to determine a fair market value. I price my work at $5 per square inch of carved surface, plus the wood and any other extras, such as installation.
One thing I never do is use woodburning on any of my work because wood burning is only a temporary art form. Take a piece of charcoal and put it in the sun and it will eventually turn white from the ultraviolet. Covering the charcoal with an outdoor varnish will slow the whitening process but it still happens. Woodburning is nothing more than turning wood into charcoal and it will always fade. A mantel is a family heirloom, lasting hundreds of years. Depending on the light exposure, a wood burned mantel begins to deteriorate from day one and maybe 20 to 50 years at best will be so faded that the artwork will be almost invisible.
With practice, a good quality artist oil paint can achieve the same effect as woodburning and will last a hundred years or more.
