We are quite literally racing the season! We have so much to do with such little time, but we're making it happen! Settling into our new homestead in Alaska, we're working on transferring some of the solar panels from our old cabin to our new cabin & finishing up the unpacking & organizing of our new home...and...we had a little surprise this week that we were not expecting...Mother Nature waits for no-one! CHILI SEASONING RECIPE:
2 TBS chili powder
2 TBS unsweetened cocoa powder
2 tsp dried minced onion
1 tsp dried Mexican oregano or Italian seasoning
1 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp salt, 1/2 tsp black pepper
GF CORNBREAD MUFFINS:
1 cup gluten-free all purpose flour (I use Bob's red Mill)
1 cup cornmeal
1/2 cup sugar or honey
1 1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 tsp xanthan, gum, if you were gluten-free flour blend already contains this, omit this ingredient.
1 cup, buttermilk, or milk Kiefer
1/4 cup butter melted, (half stick)
2 eggs
How to make them :
1. Preheat oven to 350°F. Prepare muffin sheet with 12 standard muffin cups or grease.
2. Combine flour blend, cornmeal, sugar, baking powder, baking soda, salt and xanthan gum in large bowl. Whisk, buttermilk or Kiefer, butter and eggs in medium bowl; stir into dry ingredients until well blended. Batter will be thick.
3. Spoon batter into prepared muffin cups filling 1/2 way. Bake 15 to 25 minutes or until lightly browned and toothpick inserted into center comes out clean. I always check mine at 15 min & they're done, all depends on your oven! Cool in pan five minutes; remove to wire rack. Serve warm. Enjoy!

I was thinking the same thing... there's things I need to do to my house lol ...I have been saying I need shelves in my basement for canned goods and crock pot etc because my kitchen is too small..right now my canners are on the basement floor along with boxes of jars...when I saw Tina putting her crockpot on the shelf, I said, "there you go!" my husband laughed..I got him hooked on your videos too 😂 ugh! Wish he had Joe's enthusiasm...although Joe's a lot younger 😉 I would give him grace but he was Joe's age when I started asking for these things. You encourage us all to take it day by day but get it done. 👍

I’m the same way every year I dread the rush when we know winter is coming but nothing beats the quiet and beauty when it is snowing. People always think we are crazy for living here but sitting and watching the snow and listening to the quiet….. it gives you such an appreciation and love for where we are in this big crazy world. No sirens no sound of traffic or rushing people. I’m glad you joined us in our little slice of heaven on earth. ❤❤

Love the new place. Are you going to get a LGD to guard your goats and sheep now that they are further away from the house. I never buy buttermilk but I do make my own. 1 cup milk plus 1 Tablespoon of either bottled lemon juice or white vinegar. Let it set for 10 minutes after making and you have buttermilk.

That is a fairytale cabin, beautiful landscaping, extra sleeping cabin. Only thing it needs is a wood burning 🔥 fireplace for those cold Winters. Can’t believe you have already gotten snow.⛄️ 😮. I love snow but we only get about 4 inches a year in middle Tennessee.😢

I found a company called Azure standard out of Oregon who sells all natural powdered buttermilk and whole milk. I sent a bunch to my friends in North Carolina to help those affected in the flood as refrigeration is a huge challenge right now. They have drop locations all over that cuts down on shipping. I just wanted to mention that you should get a Danish Dough Whisk to mix of dough recipes! It is amazing how much better it mixes the ingredients together! And easier!! You can occasionally find them in stores now, but Amazon is the place to get at reasonably price!😊❤ Take care!❤❤❤❤❤

You can make your own buttermilk by using 1 tablespoon of lemon juice or white vinegar to a cup of milk. Put the tablespoon in the milk stir and cover and let stand for about 10 minutes.

Wild Alaskan Homestead here, you guys should drill a hole above your chicken house sliding door into the side of the chicken house about 3/4 of an inch in diameter and through the little door so you can put a wood dowel in the door to hold it up and just a little over the door when it’s closed so you can put the dowel back in it when it’s closed to keep out Martins and Weasels. When you let the chickens out just pull the little piece of dowel out, raise the door and pin it open with the dowel. The dowel would have 2 purposes. Remember in Alaska 2 is 1 and 1 is none.😎
The snow was exciting! So were the northern lights. I am loving watching you guys put everything together there at the new cabin. Dont listen to those dumb people.
James looks like he's about ready for a homestead of his own. Although it's also probably pretty fun to do stuff and hang out with the family.

We lived in our last house for only 4 years until we found this 10 Acres of Land and we jumped on it because we always wanted to live in the Country away from people , we build our House and we’re so so happy with our 2 cats and our new Puppy Bella.
