Good solid tips Blake. Another tip is to shake the firebox to help drop ask that might be building up. I've seen a nice jump in temps when I do that. I run lump charcoal and one pro tip is to make sure that the you have good golf ball size chunks and not a chimney of fines. Talk soon.
I just bought this grill, using it for me first competition in a couple of weeks. Great video, I will watch all your others, looks like you modified your grill with the latch and temp gage.

Thanks Steak Nerd! We’ve been loving it.
Thanks for the Videos put the mods on my HB 250 today like the way they look now it time to put them to uses.
Awesome David! Glad we could help. I’m still loving those mods. Best thing I’ve done in a while.

Yep there is a video on that as well. I would 100% suggest those mods. They are the best thing I’ve done. Let me know if you have any questions.
Do you leave the HB grates on underneath the Grill Grate grates?
Yes. It helps the grates stay in place better because it holds them tighter than if you took them out.
By taking the flaps off completely and replacing them with sliding dampers like a green egg has do u think that would help temp control better ?
Possibly. But I don’t think it would make a drastic difference.
Thanks for the HB videos. My fiancé and I are receiving our 250’s tomorrow. Is that thermometer stem 2 1/2 ?
Thanks for watching!
It’s actually 2.13” but I would think 2.5 would work
