There are lots of discussions about including trans folk in the archaeological record. Good news! De-fleshing a body is a well-known and pretty straightforward process; museums use it to prepare bones for display. It involves flesh-eating beetles! I don't know if that's the process that, like, medical schools use to make those skeleton displays. I hope so; flesh-eating beetles are cool.
