I have a 2008 automatic 350z, I accidentally drained the transmission fluid and I was wondering if I was able to just refill it through the dipstick location that’s located in the engine bay?

Nope ... takes atf and needs to be drain and fill 3 to 4 times
Autos take 10 quarts of so. You can only drain 4 quarts at a time from the drain plug as well. A full trans flush is required for it.
Enthusiast POV I would just do a drain and fill. I’ve heard way too many horror stories with the 5at and 7at when they get a full flush.

You’re missing a key component. A heat exchanger to keep the temps down and prevent this from happening. Many options out now to get you one
Enthusiast POV that’s what i was thinking about. Worth it to buy coolant expansion tank as well?
