I live in the UK where lavender is abundant so I saved a lot of it and refrigerated it. I've made lavender ice cream, lavender blondies and lavender cookies with it (no extract, just lavender buds). Now I'm planning to make a cake too. To bring out the flavour of the lavender buds, the best thing is to heat them with one of the wet ingredients, eg. by heating milk, or by melting butter. No need for extract.

That's cool that you live in a place where lavender is abundant! I've experienced this problem with dry lavender that I've bought where the buds tend to have a bitter aftertaste. I was wondering if this bitter aftertaste goes away when baked with, or if the lavender cake will keep this bitter taste?

if you have lavender, but no extract, you can scale the milk with the lavender then strain it out after leaving it to cool down. works well tastes much more natural than most extract I think

I adore the look of the this cake for the lavender color but never tasted lavender anything and I have no clue what to expect if I attempted this. Someone give me a clue -- is it an acquired taste? I'm tempted to make a plain yellow cake with lavender colored frosting only because it is just so beautiful as again, I'm not sure I'd enjoy lavender food.

Use a cold wet cake belt to prevent your edges from turning too brown; therefore, less waste. Unless you ate it when we were not watching!
