    Correct! Correct! Correct! I'm exhilarated to see you toasting your own spices! When I learnt how to roast and grind spices, I stopped using curry powder. I now make my own spice mixes including garam masala, panch phoron, berbere and ras el hanout. I discovered with a few more leeks or onions and scented leaves (thai basil) added to the beef or mutton stock, you can make your own bouillon cubes. And it will come gluten free and MSG free. Many blessings!

      Dorothy Ampofo I believe Fennel is "nketenkete" in twi. I stand to be corrected, though.

      the sage is sometimes referred to as nketenkete on the market but its very small and round but the nketenkete is like unhusked rice. Thats how I differentiate.

    They use food color to make it red. The lesson learnt is to drain the water before spicing.

      Its a leave, the name in Italian is salvia but you can't find it in Ghana.
