- Lockdown cooking in Calcutta: This was filmed on 22 March, which was before the lockdown started in Calcutta.
This is for a Sunday lunch. Our meals usually consist of rice, with a dal, a torkari, and some kind of animal protein like fish or meat, and sweet chutney at the end. Both Insiya and I are cooking. On today’s menu are beans er torkari, leftover aam diye tok dal from yesterday, boal machher jhol and kool er tok.

৪। ডিম সর্ষে
৫। বেগুন বাহার/বেগুন বাসন্তী
৬। রসুন চচ্চড়ি
৭। এঁচোড়ের ডালনা
৮। পেঁয়াজকলি দিয়ে মেটে চচ্চড়ি (আমি কখনো খাই নি, শুনেছি আমার দিদিমা খুব ভালো রান্না করতেন)
আর last request, একটা dedicated video পেতে খুব ইচ্ছে রয়েছে তোমাদের কাছ থেকে, which will explain the names of the dishes: like, what is কোফতা and what is কোর্মা, the difference between ঝাল, ঝোল and রসা, কিংবা ঘন্ট, চচ্চড়ি and ছ্যাঁচড়া |

We stay Mumbai. I have been following your channel for quite some times. Your channel helped many young members of my family to prepare authentic bong dishes. It would great if you can load us receipe alu kachkalar torkari with dicey onion and piyaj kolir parath. My mom used to prepare it.

Frying a boal is considered a colossal sin in my family. Since it is already juicy fatty frying it would take out the fat content.
We just marinate the fatty boal with regular masala, a small onion paste, tomato and ginger garlic paste with whole sliced chillies.
Heat the oil hot and just add the whole mix of marinate, and let it cook in low heat. Add coriander at the end.
This produces a very bhapa like boal with it's juicy fat intact.
We call it kacha Mach because we don't fry the fish. Hope you try it. ,🥰

By the way, I too cook alone in Mumbai using maa's recipe.
Bhaat is cooked best when you cook it in haadi and drain the water by reclining it against a wall. That leaves some amount of water in bhaat avoiding then sticking together.
Onek dhonnobad tomader, sudhu matro tomader jonnoi ami ato kechu banate pari, r tomra ato valo kore dekhao video gulo, osadharon. Keep it up, besi din nei r 1M hote, khub valo lage khub.

Awesome guys ... Yes in the last you show about dividing different portion of rice for different curries . I experienced it when I came newly to Kolkata . I was just wondering with only rice and Dal , at the dinner at my friends house . Then it was almost I was going to finish rest other came . Gradually I learnt the secret and process . Bangali says we enjoy all the dish separately . Eating all the dishes together will make a chaos of taste .... ❤️❤️✌️✌️

I just wanned to share how you have changed my life. I am new to your channel. Actually started stumbled on it when the lockdown started n my cooks stopped coming. I thought why not bengali recipes??? We hardly get to eat any of it on business-as-usual days. So I'm surviving... actually living... Many times I thought i should drop in a few lines but thought nnaaahhh you would not read it or even care... but last night after tasting that beans curry I thought i must write to the couple who is helping me survive the lockdown... if this comment catches your attention do leave a sign... thanks guys and yes please do not take vacations from making videos... you should know you are a lifeline for many like me... love n hugs (virtual ofcourse)
