I gave up making breaded pork chops years ago because the breading never stayed on. Since I started doing his method of flour, egg, then breadcrumbs, the breading sticks like glue! I add a little Hungarian paprika to the flour and love the flavor it gives.
Love this recipe. I used it with some pork cutlets I had in the freezer and substituted Panko for the breadcrumbs. Served it with a cup of your outstanding Onion Soup as a first course. Great meal. Thank you.
We make thick cut chops weekly. My game changed when I started doing a 4hr water, salt, sugar brine from noon to 4 and then wash, season, and cook. It makes a world of difference!
I brine the chops in a mix of stuff (yummy), brown in a bit of oil, then bake 'til done. I really like your idea of adding more things to the breading; I'm going to do that - thanks!

My wife and I are on a Keto diet, so I toasted a few pieces of low carb Sola bread and made our own breadcrumbs. Also, instead of flour I started the breading process with a no flavor protein powder. I took most of the carbs out but not the flavor. They came out delicious! This recipe is going into our rotation immediately.

I always brine first, guaranteed to be juicy. I also use avocado oil for frying.

I do it easier I use shake and bake, we just happen to love it. I will try the flower and eggs though.
