Im from Maryland. Live on the eastern shore, Dorchester county. I love my steam crabs 🦀. We use a spice called J-O. And my favorite way to eat crab is to dip the meat in melted butter and into some more seasoning,lol. I like mine spicy!! Also we dip the meat in vinegar as well! It's so yummy! 😋 Love the videos! 👍👍
Head cheese has a lot of different names. I have always called it souse and yes I do like it a lot. Lots of great memories of my Grandmother making it when we killed hogs.
If you want to try something different, try doing crabs on a smoker/pit. Just throw them on upside down to cook. The natural juices steam/cook the meat. It’s actually pretty good….. I don’t even season them
Do you not make it a point to make sure the traps sit with the bait door facing down? Seems from what I’ve seen doing it that it definitely helps catch when they sit on bottom right

Nothing like Hot head cheese, fresh Bunny Bread, some Blue Plate Mayo then sprinkle some graded sharp cheddar. Close that sandwich and be sure not to bight your own fingers. 😂!!! Don’t forget a frosty mug filled w/ Barq’s Rootbeer. Lunch of Champions, ain’t bad on the boat while chasing Hopedale Specks !!! Bon appétit Bro 15:53

The Pennsylvania Dutch refer to hogs head cheese as souse. When you find a good butcher shop that has a good recipe it's hard to beat as a good snack!
