Glue or loc-tite the dowel pins in the barrel or jug to prevent them from lifting out and falling into the engine like mine did 🤣. Getting the squish clearance right is a crucial step for a reliable race engine. Not doing so results in power loss at operating temperatures at the least and since we all like to keep going in the race…. Cooked pistons->positive crank case pressure at the wrong time-> detonation-> premature failure. Never a bad idea to take your local machinist out for lunch occasionally 👍

From what I've heard you need to torque down to specs to get a true squish measurement
That would be true for a non o-ring gasket head since the gasket compresses. In my case, the head was metal to metal against the cylinder.
my cr 125 uses the metal shim cylinder head gasket. Am i ok to use an old gasket rather then wasting money on a new one to measure squish clearances?
I would say yes.
why didn't you put head o rings? they interfere with the squish measurement
No they don't, they squish down, so no point of installing them
