    Is brisket fat usable in sausages whether it be beef, pork, or whatever? I mean , should I save it for my sausages?

    • @SmokyRibsBBQ
      @SmokyRibsBBQ  3 роки тому

      Yes, very usable in sausage. I always save the brisket fat for either sausage and sometimes I'll render it for tallow. Just vacuum pack, label what it is and freeze it for later use.

    that seemed kind of stout on the cure salt . Majority of ratio I see is 1oz of pink cure salt per 25lbs of meat . Seams 4lbs meat would have only needed about .225 ozs of cure . Every mixture varies I guess just seamed really high amount of cure . I’m learn something everytime I make jerky or sausage etc .
