    Looks mighty tasty. Years ago my dear Mom made good relish. One year she put a stick of cinnamon in the jars. Gave it a different taste. Thanks for what you do.

      Hello there!!! :) If you have your mom's relish recipe I would love to try and make it! I love using tried and true family recipes... I'll also have to try the cinnamon idea. I love cinnamon and I bet that adds such a unique and delicious flavor to the relish!!!!!!! Thanks for such a nice comment. We appreciate it! Have a wonderful weekend!!

    My mom used to make a relish with bell peppers and onions (a ton of each) and make a relish. She ran the peppers through an old hand crank meat grinder.

    I use my meat gringer using the larger hole plate it makes a perfect size and all are the same size plus it saves a ton of time. recipe looks great.

    Nice video. Thanks for having the recipe handy so I can screenshot it. I'm growing a ton of peppers this year and am most excited about cherry peppers. I want to make cherry pepper relish like they have at the sub shops.

    I coarsely chop my peppers and simmer them in the brine until they're mostly soft. Then I'll put them in a food processor and chop them down to much smaller chunks, then simmer again until ready to put in the jars. I don't like spending all that time chopping the peppers by hand!

      That is smart. I will try that next year. Thanks!

    That looks delicious! Your video had me salivating! Any idea how hard that would be on an old man’s digestive system because I’d sure like to try it. My wife and I both love peppers but we usually pay the price if we indulge.

      +Dunning-Kruger effect Thank you! It really is delicious!!!! :) I don’t have a sensitive stomach, but my mom eats this with no problem and she’s 65:) That’s not old but it’s older than me 😆 If you like peppers I would make 1/4 the batch and try it:)

    Could you use a pressure canner vs hot water bath?

    • @CollinsCountry
      @CollinsCountry  9 місяців тому

      +Robt C yes but it would turn all of this to absolute mush. I wouldn’t recommend it. Use a pressure canner pot but just fill it with water and water-bath if that’s all you have. No big deal:) just don’t put the lid on it:)

  • @jeffdanielspoker6717

    I know nothing about canning haha but do you store those at room temp or fridge or freezer ? Also how long does it last canning rather than just storing in a jar in the fridge ?

    • @CollinsCountry
      @CollinsCountry  Рік тому +1

      +JeffDanielsPoker Hey! If jars are canned (aka processed in water bath or pressure canner) it is technically shelf stable for years. Some say forever, some say a decade. It just depends. But everything in the jar is sterilized so there are no spores or oxygen inside to grow bacteria for it to spoil:) Canning is an incredible process. If I put this in the fridge it would probably last about a month… But now I can use this jar a decade from now (but it definitely won’t last that long) because we love this stuff and it will get eaten within the next few years ha
