    Ingredients:
    For Seekh Kebabs:
    1 small onion
    3-4 green chillies
    4-5 garlic cloves
    1-inch ginger
    Handful of coriander leaves
    300 grams boneless chicken
    Salt, to taste
    1.5 teaspoon red chilli powder
    1.5 teaspoon coriander powder
    1 teaspoon cumin powder
    1 teaspoon black pepper powder
    2 tablespoons butter or oil
    For Gravy:
    2 tablespoons oil (for cooking)
    1 medium onion, cubed
    2 green chillies
    6-7 cashews
    Handful of coriander leaves
    2 tablespoons yogurt
    Mint leaves (optional)
    1 teaspoon ginger paste
    1 teaspoon garlic paste
    1 cup water
    Salt, to taste
    1 teaspoon coriander powder
    1 teaspoon cumin powder
    1 teaspoon chilli flakes
    1 teaspoon black pepper powder
    2 tablespoons cream or milk
    Instructions:
    Chop onion, green chillies, garlic, ginger, and coriander leaves.
    Add boneless chicken to a chopper and mince finely.
    To the minced chicken, add salt, red chilli powder, coriander powder, cumin powder, black pepper powder, and butter or oil. Mix well.
    Refrigerate the chicken mince for 30 minutes.
    Heat 2 tablespoons of oil in a pan. Add cubed onion, green chillies, and cashews. Roast for a few minutes, then let it cool.
    Transfer the roasted ingredients to a mixer, add coriander leaves, yogurt, and mint leaves. Blend into a paste.
    Remove the chicken mince from the fridge and make skewer kebabs.
    Shallow fry the kebabs until they are 40% cooked and have a light golden brown color.
    In a larger pot, heat 2 tablespoons of oil. Add green cardamoms and cloves.
    Add the green paste prepared earlier. Cook for a few minutes.
    Add ginger paste, garlic paste, and fry until the raw smell disappears.
    Pour in 1 cup of water. Add salt, coriander powder, cumin powder, chilli flakes, and black pepper powder. Cover and cook until the oil separates.
    Add cream or milk to the gravy. Transfer the fried kebabs to the mixture and toss gently to coat.
    Cover and cook for 3-4 minutes.
    Your tender, juicy chicken seekh kebabs in gravy are ready to be served. Enjoy with flatbread, naan, or any accompaniment of your choice.
