    *Lucknow Galawati Kebabs Recipe*

    *Ingredients:*
    - 500g mutton keema (with 20% fat)
    - 1.5 tsp ginger garlic paste
    - 2 tsp salt
    - 3 tbsp of raw papaya paste
    - 13-14 cashews (soaked in water)
    - 1 tbsp fried onions
    - 1 tsp jeera (cumin seeds)
    - 1 tsp cumin seeds
    - 1 tsp sugar
    - 1-inch cinnamon stick
    - 1 small cardamom
    - 1 star anise
    - 1 tsp cardamom powder
    - 2 bay leaves
    - 1 tsp nutmeg powder
    - 4-5 cardamom
    - 4-5 cloves
    - 1 tsp black peppercorn
    - 1 tsp fennel seeds
    - 4 tbsp gram flour (besan)
    - A few drops of keora water
    - A few drops of rose water
    - A pinch of saffron (soaked in milk)
    - 2 tsp desi ghee (clarified butter)
    - 2 tsp red chili powder
    *Instructions:*
    1. *Prepare Keema:*
    - Mix mutton keema with ginger garlic paste, salt, green papaya paste, and raw papaya paste.
    - Let it rest for 1 hour.
    - Make a paste with soaked cashews, fried onions
    - blend the following masalas to a fine powder - jeera, cumin seeds, sugar, cinnamon stick, small cardamom, star anise, cardamom powder, bay leaves, nutmeg powder, cardamom, cloves, black peppercorn, and fennel seeds.
    - Roast in a pan without oil the Besan until fragrant.
    - Spread out the marinated keema in a flat bowl.
    - Add the powdered masala, cashew, and onion paste to the keema.
    - Mix well.
    - Add keora water, rose water, saffron-infused milk, and desi ghee. Mix well.
    - Add roasted gram flour and mix until the keema paste tightens up.
    - Add red chili powder and mix well.
    2. *Shape and Fry Kebabs:*
    - Heat oil in a pan.
    - Take a small bowl of kebab mixture and shape it into a disc.
    - Fry on low flame until cooked.
    - Serve hot with flaky paratha, onions, and chutney.
