This really only works with meats of fish that require a fairly short cooking time. After all, you are creating a reactive moisture reducing and super-seasoning mini-oven.

Unlike the weber vent system, the old napoleon kettle vent system sucks! Hardly any temperature control. Hope the new design works better.
We just cook directly on grille and just put some salt on them and cut individually and fo not remove the fat . They turn out great
3 ribs, 5 lbs of Salt, 3 hours of cooking, and 2 more hours in the oven and still had to put it back on the grill - all for 3 ribs, I think I’ll pass.
