  • Another battle in our Whetstone Wars series! Two great names go to war. Who will be the champion?
    King Hyper Whetstone #1000 (Standard Hardness)
    $59.99
    The King Deluxe 1000 has always been the standard for users wanting a great quality, budget friendly 1000 grit whetstone. It has excellent feedback and offers what most consider a true 1000 grit finish. Knife owners with knives no higher than 61 Rockwell would be well-served by the Deluxe 1000. But what about those of us with knives higher than 61 Rockwell?
    In comes the King Hyper 1000 - the new and improved version of the Deluxe 1000. The cutting speed has been increased, while retaining the feedback that the Deluxe 1000 has always been known for. The new compound is also harder, and slower wearing. The Hyper 1000 takes the all-around performance qualities of the Deluxe 1000, but can now tackle knives with Rockwell ratings well over 61 (tested up to 66).
    Made in Japan
    Spec:
    Origin: Tokonama City, Japan
    Grit No.: #1000 WA
    Stone Type: Soaking
    Dimension: 205 x 70 x 34mm (8.1 x 2.7 x 1.3")
    Weight: 990g (34.92oz)
    Material: Special Synthetic Material
    Made by King Whetstone, distributed by Matsunaga Stone, Osaka.
    Morihei Hi Whetstone #1000
    $78.00
    As a whole line and on their own they all perform exceptionally well with that natural stone feel Ogura San likes. They don’t require soaking and all have the right balance of being hard enough yet give nice feedback that some medium hard natural stones have made them easy to use and enjoy.
    For polishing the 4000, 6000 and 12000 grit give very strong contrast of hard and soft steel, with the hard steel becoming bright with the soft steel looking thick and hazy.
    Written by Ivan Gomez Fonseca co-owner of Tosho Knife Arts also professional knife sharpener.

    Glad to see you're okay! I'm curious about when you plan to thin the bevels on the Moritaka's? All this dulling and sharpening they must be getting thick, which although both stones will still be equal it will affect the edge you get.

      You are correct. That was on my mind as well

      @@nadm If you do plan on thinning by hand, I recommend that you get some wet dry ceramic sandpaper and attach it to a glass backing (I personally use rhynowet redline 180 grit). It works faster than you think, but also loads faster than you think. I'd recommend that you get a sandpaper eraser if you plan to go through that route.

    Nice music. I'm on the lookout for a medium grit whetstone and the shortlist is Cerax 1000, King Hyper 1000 and Morihei 1000, so your video helps add on some information for me.
    I'm not sure if this is your very first time with the King and Morihei, perhaps with additional sharpening sessions some things might be adjusted for a more balanced view on what the stone can or cannot do - as you know they are quite characteristic. E.g. soaking the Morihei for a couple of minutes before starting (despite being a splash and go), getting some mud with a nagura, etc.
    I was particularly looking to see if either stone got a better kasumi finish, actually - would be nice if you have an addendum!

    • @nadm
      @nadm  2 роки тому +1

      So, I would take the Morihei over the king only because it gives you a chance to ease up into your bevel. The king is a little bit more aggressive and has an aggressive sound. People swear by the king so you're never gonna go wrong. None of these are really breaking the bank I hope so you'll probably end up with both one day. Suehiro is just an amazing company and you really couldn't go wrong with that one right off the bat because I'm just the biggest fan of that company. Morihei gives you the natural stone feel as well as it's soft enough to not be super aggressive on your edge Super aggressive on your edge. Morihei would be the one to give you the better Kasumi finish you're looking for

      @@nadm Thanks for the tips. I was going to bite the bullet, but decided to pay a new knife place I just found out about a visit before purchasing on Amazon. In the end, the sales guy talked me into buying their Tanaka 1000 - soft. It looks suspiciously like the Gesshin 2000 from JKI!
      They also sold Morihei and King Hyper, and the guy basically said Morihei has a very glassy feel; it's like a splash and go part natural, part-synth stone. Apparently not too good for a kasumi finish. He showed me how much of the Tanaka he used up, it was perma-soaking. Pretty cool and I'm excited to see how it performs. It's also muddy, which will help the kasumi.
      If and when I decide to move on from my current finishing stone, I'd probably get a Morihei 4k or 6k to "experience how a natural stone might feel like". Lol!

      I could use anything to doll it. That is a $35 stone that I’m using like a brick. It’s a rough stone. I have a much better version of that exact stone underneath. I would probably never use that stone again for sharpening a knife.

      Been using the Cerax/Rika setup for a few years now. Works great! That said, I may be replacing the Rika. It’s not *bad* but it loads up super heavy for a 5k and it wants to grab the edge more than any of my other stones.

  • @hoggif

    King hyper is a great stone. I find it pretty similar to Bester 1200 but slightly slower. Great feedback. It has a kind of dragging velvety feel. It makes a good set for other similar feeling stones like Suehiro Ouka 3k and Rika 5k.
    Morihei 1k could be nice to try out some day. I have mixed feeling for the other Moriheis I've tried. They perform well but I hate the somewhat glassy feeling (if I'm sharpening anything else than streight razors)

    • @nadm
      @nadm  2 роки тому

      In these bottles, you have to remember that it's head to head. It might not be some other stones you like but it was the winner today.

    • @hoggif
      @hoggif 2 роки тому +1

      @@nadm I actually got Morihei 1k now. It is so different and hard, but I'd not call it glassy, actually I find it a bit gritty feeling (not in a bad way). If it seems glassy the factory surface is probably not worn out yet. A few more sharpenings or flattening the surface a few times with eg. Atoma 140 really changes the feel when new.
      I like this stone pretty nice, not as the grabby velvety feel that 1200 Bester has and King 1k hyper somewhat too. Feels it may be bit on the coarse side for a 1k stone too.
      When I need a hard stone, I find this one quite plesent.

    Clean the slurry and swarf off the stone for the final edge leading passes, loose grit impacting the apex will hinder the final sharpness.

We have another 18 or so what StoneWars lined up and then we will take all of the winners and start having them battle against each other. We try to do one Whetstone war per month and we try to have a sharpening video with some type of advice once a month which this one that we just shot is gonna be amazing I really am excited about it. I'm sorry that it bothers you. I don't do it on purpose. I was tested for Tourette's and I don't have it. They did an MRI on my brain. It's just a facial tech that happens when I'm focusing very hard. It's gotten better since I got off of a certain medicine. I still do it but a lot less. The medicine has been prescribed for more than 20 years but it's actually said on the side of the box now. They finally made them put it on the box. Singulair is the medicine and it says that it can cause those types of facial tics so it definitely made mine worse.
