You inspired me to look into local flours for my dough, but unfortunately it's double the price of my standard flour. How did you go about costing your bread with the premium flour? Did your bread increase in cost or did you keep it the same?

Nice video, specially when I see it’s based in the UK, I wonder how did you do the labels in terms of proportions and ingredient list, I struggle with the ingredient list as I don’t know how far I should go because some are very specific others not much but in this case, yours also include some acids and vitamins therefore I get confused if these were added by you or where in the ingredients you’ve used, maybe you ended up using a food lab I don’t know. It will be helpful to understand s bit more to get the final label. Thanks again
hello! I list absolutely everything as I have severe food allergies myself so list all of the ingredients (the acids you prefer to are probably from the vegan butter I use) and also list the allergens in bold and capital letters... based on where you live, I would suggest getting in touch with your local food authority/ online training for a food business. Over here I've taken level 2 & 3 food hygiene (www.ncass.org.uk/training/food-hygiene/level-3/) which goes into much more detail on the legalities of handling allergens and labelling etc. Hope this helps!

But I do have one question regarding margin profits, mainly if you can disclose what percentage of your best-selling loaf is pure profits (after you calculate all the ingredients and energy). My RM2020 oven was roughly £3495.00 +vat - it's definitely a big investment but the best one I ever made not only in terms of scaling up my bakes, but also the rm2020 community of bakers around the world is such a brilliant resource and help to self taught bakers like me! My mixer was second hand and bought it for £250 (v good price). Whereabouts are you based? x

Hi Lily, re baking paper. I’m using A LOT too and when I researched the cheapest, I found Aldi were the cheapest. They come in 10m rolls and have gone up from £0.79 to now £0.99 per roll but it still works out the cheapest 😊
