The reason for the 2 hour wait was probably the ribs, proper fall off the bone ribs take at least 6 hours to cook if they started them in the morning it would explain the 2pm serving time
It sounds like they pulled up a minute before opening and you can't do that if you open at noon you should be showing up minimumly at 10 . For prep and to turn on all the equipment it takes a while for it all to heat up .

Most people don't know this but this place prides themselves on using the freshest of the fresh every order that comes in they send someone to go buy your food so that it is super fresh then they prepare your food this place just wants you to have the best quality food

I'm Texan and lived within reach of Franklin's BBQ. Never went because they said the wait was like 6 hours. Terry Black's, at MAX, was about 30 minutes and was phenomenal. I will NEVER wait 2 hours for food, it's never worth it.
So I notice you mentioned Sandra’s Next Generation as a place nearby this place. I’ve actually had Sandra’s once, albeit at the New Haven Festival that happened right before the flood. Their Mac and cheese did leave a little to be desired, but overall, they’re better than how you described the food from this place.

I cook my greens in fatback and steam them with sugar salt and pepper that’s all you need. People be doing too much with greens. They be trying to cook them cause they really don’t know how. And I am in the south.
Ribs are overcooked, not supposed to be "fall off the bone" should be able to have a tender bite and pull away with meat left on the bone. However some people prefer the fall off the bone method..

The problem is that if they don’t have what you ordered, they sometimes do not tell you until after you’ve already paid for it. If you don’t have a certain item, I’d rather you tell me upfront before I place it.
I judge a restaurant off how the common area looks 100% of the time. Cleaning the front of the restaurant is easy. Cleaning the back is where the time and effort go. So you know if they're to lazy to clean the easy part, they damn sure aren't cleaning the hard part.
Regardless of how that food tastes, If I walked into that place and had to wait 2 hours, no way in the world would I be eating that food. I would have asked for refund and left over an hour earlier... actually, there a good chance I would have never placed an order to begin with.
