I roast a big chicken dusted with Johnny's seasoning salt 2 hrs and 15 min in a 375 degree oven for dinner and there are always leftovers. I boil what is left for an hour, cool and remove from the bone and air fry the skin with a dusting of the seasoning salt until it is crumbly crunchy. Use the broth with some Better than Bullion, cut up baby carrots and green onions and garlic, a squirt to taste of Sriracha, and then add the noodles just before it is done. Once the noodles are cooked, put in the chicken and return to a boil. Chop the crispy chicken skin and use some chopped green onion and sprinkle those as topping on the individual bowls. My 25 yo son says it is the best soup he's ever had because of that crispy chicken skin on top.
Chicken noodle soup is the best thing for a cold and Nonna Pia is the best thing for a warm heart. Bottle that soup with the combination of both and you’ve got the best cure ❤
My family is from Northern Italy. Grandma made a soup of chicken broth, eggs, Parma cheese and parsley. I made it for someone and they said that they never ate chicken soup with Parma cheese. I told them, well, I never ate it without it. 😅
