Mamie Eisenhower's Million Dollar Fudge

President Eisenhowers favorite candy so it is said and apparently the President had good taste. This is the most decadent, richest fudge this side of Mars. Its made with Two types of Chocolate, Bakers Sweet German Chocolate, and Ghirardelli Semi Sweet Chocolate.
I DON'T KNOW WHY I KEPT SAYING CONDENSED MILK - I'VE MADE THIS RECIPE FOR YEARS.

4 ½ cups sugar
1 large can evaporated milk
pinch of salt
12 ounces (2 cups) semi-sweet chocolate chips
12 ounces (3 packages) German Sweet Chocolate
1 pint jar of marshmallow crème
2 tablespoons butter
2 cups chopped pecans
Measure out ALL your ingredients and butter a 13 x 11-inch pan. Put the chocolate and marshmallow crème in a large bowl.
Combine the sugar, evaporated milk and salt in a large saucepan. Using a medium heat, bring to a rolling boil, stirring continuously. May have to lower the heat after bringing to a boil. Never stop stirring. This mixture will burn easily. I use a wooden paddle with a flat edge so I can scrape the bottom continuously. After bringing to a rolling boil, time for 7 ½ minutes. Remove from heat. Add the butter.
Pour the hot mixture over the chocolate and marshmallow crème. Beat by hand until all is melted and blended well. Fold in the pecans. Pour into the buttered pan and let cool 6 or more hours before cutting. Darlene reports she lets it cool overnight before cutting.

My mom made this every year and I do sometimes too. It always makes a ton and the taste is wonderful. We had a vestibule that was quite cold in the winter and she would set it into there to set, but one time our dog snuck in and began eating it. My mom was furious, and we had one sick dog( the days before they said not to give your dogs chocolate)! I'm glad you have this on You Tube! Must have come out in the fifties as that's when my mom made it.

I grew up with this fudge but mine had Ghirardelli Flicketts not the Greman chocolate. Took a long time to find a substitute for the Flicketts when Ghirardelli stopped making them. My recipe uses Evaporated milk which you used but called it Condensed. My recipe is, down to the ingredients and stirring time, the same. Always loved how it never sugared like so many do.
I do use ghirardelli chocolate chips. Semi-sweet and bakers German sweet chocolate I made a mistake in the video I only use evaporated milk. It is noted in the video. Sorry for the confusion
Don't forget to add vanilla extract or vanilla paste. Recipe seems to call for too much sugar. Should sugar be half as much?
I just made this tonight. I'm sampling it. Very delicious. It still needs a little more time to set. This is very fool proof. I roasted walnuts before I added them for extra flavor. 😊🎉

I make this fudge every year(for 55 years) I have the same newspaper article. So good but that chocolate is hard to find. My family will miss this fudge when I get to old to make ir. Lol

I discovered this recipe recently, and I just finally was able to make it. At the end I told my daughter “…this is the kind with nuts, the next batch I’m not sure what I’ll put in”. And then I looked at the table and there was my 2 cups of chopped pecans sitting in the glass measuring cup. Oy! It’s sure to be delicious but I do love those pecans!

I made a batch this morning and I decided to experiment. I added 2 ounces of Praline Pecan Whiskey. As I type we are waiting to see what it tastes like. When I added it all the alcohol quickly vaporized, so there shouldn't be any alcohol in it. Hopefully, it left behind the flavor notes of the Praline Pecans.

What elevation a at? I'm at 6,000' so I have to adjust all my candy recipes as the boiling point is about 12 degrees lower. I wonder how that affects the 7.5 minutes cooking time? I think I'd rather bring the caramel sauce to the soft ball stage with a candy thermometer. :/ Thoughts?

Darlene, I made this again last night but accidentally grabbed my half sheet pan instead of my jelly roll pan; of course, the cut fudge thickness turned out to be too thin! May I re-melt the fudge and put it in the right size pan so the finished fudge size will be thicker? I'm concerned it may get grainy if I re-melt it. Thx.
Oh I'm so sorry. Please let me know how your plan turns out. My advice is, to heat it gently, just enough to make it malleable so you can reshape I in the pan. Make sure you butter the pan you put it in, and let it sit over night. Also if you plan to do this in a microwave, I would use as little heat as possible. Microwave in pulses may 20 seconds then stir, until you can begin to spread it. I am sure I'm a day late and dollar short. We were at my grandson's 2 year old birthday party, and didn't see this until now.
@@DarlenesTable I'm so pleased that it all worked out! I gently warmed the whole batch in an enameled cast iron Dutch oven, covered, on stovetop on very low heat with about 3 tblsp of evaporated milk. When it warmed enough to just blend a little, I scraped it into a proper size buttered Pyrex and it was glossy and beautiful. It set up perfectly and tasted creamy and perfect later, exactly what I'd hoped, perfect for gift-giving. Whew! That was close! 😉👌

Try a high quality milk chocolate such as Ghirardelli milk chocolate chips. If you have Amazon delivery where you live they sell it but it is definitely more expensive

Do you boil it or let it simmer during the 7-1/2 minutes? Thats the problem I had when I first started making it. It has to be a rising boil the whole time.

Help!!! We have made this recipe for forty years, using the ingredients you shared. All of a sudden, the fudge is dry and crumbly. It happens about a third of the time. We just don’t get what is happening. Can u help, PLEASE!!
Very likely overcooked. It must be a slow rolling boil for precisely 7 1/2 minutes.

My recipe called for EVAPORATED milk. In the day we used Pet brand milk in the fudge and Carnation in the pumpkin pie. Don't know why just what the recipes called for. 😉
i modified this recipe a bit and added one step, - Take chopped pecans, and throw them into the trash 😁

I wondered what happened, I followed the recipee with condensed milk, and well, it didn't exactly work, not enough moisture with the sugar; I used up all my chocolate so I will pass this one off on my co-workers proclaiming that it is my first attempt.
As soon as I get me some more chocolate from Amazon, and this batch gets consumed, I'll try again...lol

It is evaporated milk NOT sweetened condensed milk. I made a mistake when I said that and corrected it. only evaporated canned milk. bring to a rolling boil for exactly 7-1/2 minutes. I'm sorry if you used condensed milk but I did correct that in recipe as well as stating it. it's really a no fail. so sorry

Did you actually make this recipe. the most important part is having the sugar and canned milk at a slow rolling boil for exactly the 7 1/2 minutes. Is the fudge too soft or too hard.

No that is an entirely different recipe. This recipe has 2 different chocolates
