Making this bread is a love of labor & patience, but the result is wowwy , now you can put fried eggs in it , Chinese sausages, crispy pork belly the filling is endless. This chef bread skills is impeccable.

The pork portion I love to use (I know it is probably not traditional, but it is great). I use a grilled pork from Bun Cha (sliced and marinated shoulder, not the meatball). Has to be grilled directly over lump charcoal, like inches above the coals.

I'm living abroad now, so suddenly seeing that shaped baguette kinda got me emotional for some reasons lol. Anyway, here's my 2 cent, as somebody who grew up in Hanoi
- The bread they usually use has a very airy inside (mostly cause it's cheaper that way lol)
- I actually havent seen bánh mì with xíu mại before, or at least inside the bánh mì itself. The most popular combo I see is with xá xíu (or char siu)
- The aunties usually cut the daikon and carrots into longer strip, so that it's not too short and crunchy
- Pls dont add random herbs people lol. I guess people think Asians (or at least Vietnamese) eat a bunch of herbs with every food, but no, that'll drown out the flavor of the dish (looking suspiciously at Westernized phở 👀)
- We usually use sriracha instead of any chillies tbh. Cause the red chilli in Vietnam packs a punch, it's kinda unrealistic to eat with bánh mì, so, just squeeze in some sriracha
- Also, fun fact, bánh mì literally just means "bread" in Vietnamese lol. I used to get so confused as to why foreigners refer to it as a name of a dish

The banh mi is a great example for the positive aspects of cultural appropriation. The vietnamese learned about the bread and paté from the french and made it their own.

This is called bamh mi xiu mai (xiu mai, Vietnamese meatballs only for banh mi, stuffed bread). "Banh mi" in Vietnamese only means bread.

It's often not included
Bánh mì xíu mại actually does not include pate. Pate is used only with bánh mì thịt nguội (jambon) or with bánh mì chả lụa.

There are countless ingredients you can put into a bánh mì and you can find so many types here in Vietnam. Kudos to your version and appreciate spreading the love.
My only critique is the bánh mì (bread) itself. It should more airy. I've not seen any vendor remove the insides like that once.

Banh mi Viet Nam very simple 😍😍😍. No jalapeno because it's very spicy. Just : bread - pate - pickles - cilantro - cucumber slice - fried egg . Chilisauce , mayonaise ...So yummy
tbh the perfect bánh mì is the combination of what you love, put in whatever you like and if it taste good than it perfect

I was told that the crumb of the bread was used of rice and wheat flours.

Jalapeño isn’t used in Vietnamese cooking. Sometimes, you’ll find it as optional in banh mi and pho. However, you may find jalapeños in salt and pepper calamari or salt and pepper shrimp dishes, but these dishes may be from pre-Vietnamese cooking. Same goes with some stir fry that might have jalapeño.
Jalapeno is not available in Vietnam (not sure if it can be grown or imported now). We only use Thai chilli pepper, or any other kinds of Asian hot pepper available in the area.
Why do they remove the water from the vegetables before they add it to the brine?
Because it’s a quick pickle it allows the brine to permeate faster.

The Greatest Sandwhichws, Ranked:
1. BLT
*Only if one respects the BLT. It should be made when tomatoes are in season and straight from the garden - and no other times. It should be treated as a TOMATO sandwich seasoned with lettuce and bacon, not a bacon sandwich.

I know that "Chef" really popularized it , and it's become hella mainstream, but the Media Noche or Cubano is one of the best sandwiches I've ever put in my mouth!
If we are counting hamburgers as sandwiches (I believe they are but also have become a category all their own),it would have to be #1.
Also high on the list for me would be Cubano, Porchetta, Turkey Club, Croque Monsieur, Meatball Hoggie, Po Boy, Nova Scotia Lobster Roll.

It's nice, but the spirit of the banh mi, is beyond that, it's to do with local ingredients or product without reproducing like to like. You have constraints on lesser quality products, well that's the spirit. Banh mi needs to be cheap , it's not a fine dining food for upper middle classes people. It's the essence of street food.

Made this bread in substitute for cuban bread in my search for my childhood favorite "pan con bistec" steak sandwich.
This bread recipe - only modification brush with butter at the end and finish with salt. Next recipe im bumping the salt up 25%. My 2¢
Steak - ny strip jaccard and pound to 1/4" thick "pallomia style" marinade in mojo w/sliced onions. 4-6hrs not longer or will fall apart.
Grill steak for flavor and char - onions plus 1oz of marinade w/1/4th cup avocado oil fry onions.
Set all aside.
Make Lebanese garlic sauce - turn some into your own garlic mayo - spread on bread - add steak and onions - press sandwich - enjoy.
