Oh this was so helpful as I'm new to using Lemongrass and its now my absolutely favourite herb/seasoning - I'm Indian btw and I like to add a little bit to Indian food - so yummy
I love lemongrass! When I was traveling in Bangkok, I found many coolers filled with wash cloths infused with lemongrass. When I used one to wipe my face, I would take a deep breath just to smell the aroma. Love love love the aroma of lemongrass. I recently found a few stocks at my local Asia market, in the produce section. I put it into a jar with about an inch of water. In about a week, I saw roots! I than planted in a pot. I have long leaves now to make lemongrass tea, and many other dishes that call for it. Thank you Pai & Adam, for all the time you spend on gathering all the information and supplies needed in making your videos.
My squash partner just gave me a bunch of home-grown lemongrass and I have no idea what to do with it, so this video was a big help. Very clear, comprehensive and concise. Thanks!
Lemongrass is called "Fever Grass" or "Razor Grass" in Trinidad & Tobago. The top portions (including the sharp blades) can be steeped in hot water, and makes a very pleasant tea, that's good if you have a fever. It really is very fragrant, and I love its strong flavour in my Tom Yum Goong :) Great explanation video!
Btw lemongrass grows like a weed, take one stalk, stick it in the ground and it'll grow and multiply. If you live in a place where winters are harsh, plant it in a pot and bring it inside during the winter. Fresh lemongrass, free and whenever you need it.
Easy peasy to grow here in Northern California and is a nice landscape addition.Ours typically grow to 5-6 feet diameter next to Thai Basil, Thai peppers.
When I don't have fresh lemongrass I use essential oil of lemongrass, but an ever so tiny amount--like 1/2 drop. It doesn't break down over longer cooking times but imparts the lovely aroma of lemongrass. Be careful not to use more than a drop or less! I use a toothpick to deliver the oil.
I had lemongrass/mushroom soup starter at a local Thai restaurant Called "Thai Me Up" . The soup came and it was clear with green onion on top. I thought it looked bland at first, but holy heck it was a flavor explosion! It was so delicious I could not get over it! I have been trying to find a copycat of it since. I did search through your videos and hope there is something similar to that here somewhere. Still binge watching! Love your stuff!
Thank you for this wonderful channel. You have taken the mystery out cooking with Asian ingredients. You are so professional and thorough with your presentation, yet just adorable.I look forward to trying some of these recipes.
Wonderful, informative video, as always. I would add, as a few others have, that lemongrass is very easy to grow and is an attractive accent plant in any garden. It also well in a pot, so having your own plant is even an option for an apartment dweller. I grow a patch every summer then dig it up in the fall and freeze some to last through the winter.
Pailin, thank you for all your recipes from all different Asian cuisines. The recipes are all user friendly and of course delicious. And don't ever lose that beautiful smile and attitude.
Thanks for some info on lemongrass.. I usually boil it in water n drink like hot tea.. some says it's good to lower cholesterol, lower sugar level n many more... Thanks also for all the good recipes you shared.. God bless you more😘😘😘😘
Great video I'm from Trinidad and Tobago and we love Lemongrass aka Fever grass for tea. I love all the great health benefits it has. It helps me with digestive problems
I like very much you channel and how you explain about ingredients, recipes...Im from the Dominican Republic, we use lemon grass leaves for infusions and it taste great, try it.
Thank you Pai for sharing some tips about lemongrass. In the Philippines it's called "TANGLAD". I hope u can share your own version of TINOLA (chicken soup) using lemon grass in Thai way. Looking forward more videos & tip from your channel.
Recently found frozen lemon grass for $3 for 400g at an asian grocer and was so excited- I know it will have a bit of water added etc, but I usually have to pay $3 for 30g from the supermarket here in Australia.
Buy a stick. Trim a few millimeters from the stem and set in a glass of water in a warm sunny place until it shoots new roots then plant it (even in a large pot). In a couple of months you will have a large plant and you won't need to pay those ridiculous prices again. I'm living in Sydney at the moment and it grows easily!
I have a friend from Vietnam who puts it in a mortar and pestle or a food processor and grinds it up and then freezes it in ice cube trays. It is completely edible then. Oh most of the time she also adds a bunch of garlic ground up with the lemongrass.
Lemongrass here is cheap.. it's actually free, it grows everywhere! Lol western culinary makes it complicated... we just smash it, fold it, tie it... then toss it in a soup... its very good in roasted chicken and pig( lechon)... yum yum
i just used lemongrass at home for the first time in a small city in India with my parents and i sliced the bottom and put the entire thing in the pot along with ginger, jaggery and cardamom and it turned out pretty nice....i put water in it again for a 2nd round and that worked well too...also..the host so beautiful...east asian women are just so good...even better than lemon grass lol...
How i use lemongrass in a special dessert, you have to try this its sooo good. Finely shopped lemongrass mixed with yes popcorn and Thai basil, add the mix in top of a Creme Brûlée. I have so much success in my restaurant with this 👌
Hi Pailin, can you please make a video on kaffir lime leaves? And if we can you use dried, also on galangal please ? And can you make a video on Thai squid salad pleaaaaase ? Thank you so so much
thank you so much. walking passed lemon grass for decades wondering what it was all about. Was hesitant to try it .Soon will buy it, as if I know what it is. Sincerely thank you.
I love lemongrass tea,it's hard to find the fresh lemongrass the place where I live so I use dried one, the longer I simmer it the better results it give.
Thank you for this video. I grew lemongrass for the first time this year - super easy to grow! Could you please make more recipe videos using lemongrass?
Thank you for the lesson with lemon grass. I had no idea and made the twice cooked chicken recipe which called for the lemon grass. I'll have to remake it even better now.
Thank you, Pailin. Very useful. Please consider providing the actual Thai script as well as the romanized version of the names of things. Perhaps a few characters at least might stick in memory for someone.
I typically grow two lemongrass plants each year - one to harvest in the Fall and one to save for the next year. The temperatures here in North Carolina aren't conducive to keeping it outside year-round (it can't take freezing temperatures or frost) so one of the plants gets pretty radically trimmed, dug up, put it in a largish pot, and then put in our (heated) greenhouse. Once Spring arrives, I'll divide it and put it back into the ground. I tried growing some in a pot this past season, but the results were underwhelming as compared to being in the ground. The plants like it hot and wet (go figure). For me, freezing is the go-to solution for long term storage and usage.
Great video! I have had great success growing lemon grass here in Houston. My Kaffir lime tree is also doing extremely well. Thai basil is another Thai staple that is a fast grower here. No substitute for fresh produce. I would like to grow galangal but have not been able to find fresh galangal (only frozen). If any of your viewers are growing fresh galangal or have access, and are reading this, I would love to get some so I can add it to my garden.
I grow lemon grass in my yard but we only use the leaves for tea and it has an awesome taste my mom drinks this tea most days. But I would love to see some recipes with this awesome plant.
I didn't know that. Wrapping the lemongrass in aluminum foil will extend it life. Hey, learned something today. Thank from Gatlinburg, East Tennessee. We do get snow from December to February. One week of snow off and on, everything is dead.
Can you show us how to make Thai lemon grass ice tea? It’s one of my favorite drinks but I not sure how to make it haha 🙈 The ones I make taste so differently than the ones in Thailand..Thank you!
Thank you for this video Pailin! I love Thai eggplant but I notice that none of your videos or recipes feature it. I was wondering why? I would love to see a video on how to use it.
Sometimes I can't get the flavor out of my lemongrass when I do stir frys, despite prepping it as you described. What could I be doing wrong? Does the timing matter when you toss it in the pan? Thanks!
Thanks for the tips, My Thai wife uses it and I'm not a fan of the flavor it reminds me of Pine Sol for some reason. There is a recipe using a whole chicken I want to try and it requires Lemon Grass, the good news is there is a few other ingredients that should help make this recipe very tasty. Fingers crossed. Be well.
Would be great if you could list dishes which use lemongrass. Or whatever you are reviewing. As sometimes ive bought some ingredient but it ends up in bin because i don't know what else i could use it for. So maybe write a list where eg lemongrass is used that way when we find the ingredient, if we have some left over, we'd be able to use it for another dish. Same goes for tamarind, kefir lime leaves and etc
I just bought a squeeze tube of lemongrass cuz I ABSOLUTELY LOVE Asian style soups ,particularly the broth. I never used lemongrass but I have a little idea what it does.

They also tell me rosemary is a weed...and I just killed it. #blackthumb 😂
Lemongrass is easier to grow than rosemary, lol, you should try it. 😉
In Malaysia we often keep lemon grass in chiller, soaked in jar of filtered water. It can last a month and still fresh like new. You should try 😊
Easy peasy to grow here in Northern California and is a nice landscape addition.Ours typically grow to 5-6 feet diameter next to Thai Basil, Thai peppers.

All the videos I've watched from Pai are excellent so I've gotten in the habit of "liking" it as soon as I start watching, lest I forget to do so.
We use lemongrass a lot in Sri Lankan food too in the North, same with Kaffir Lime Leaves

Emily C I know exactly what you are talking about!!! If I go to markets I can find whole lemongrass but local grocer only has bottom half... From SA
Price at my local asian grocer - AUD $10/kg. Price at Coles supermarket next door - 1 stalk (20g) AUD $3.50 = $175/kg.

Very generous as well as very helpful tips!!. Great job and you appear to have a very refined palate given you're descriptions of flavour profiles.

Hi - and great idea :) Added to the request list. Cheers! Adam
I found dried lemon grass, do I need to rehydrate it?
It was helpful.. Thank you!
Good Information ! Thank You !
Great content. This was probably the third video I found but this was the most descriptive. I appreciate all the camera shots. Subscribed!
Lemongrass Is,Delicious. 😊
Thanks for that Video. I learnd something. Great Channel btw :-)
I grow it in summer but here it never gets to the stalk stage before first frost. I am stuck with just the grassy part, and lots of that. Is there any point in that or is it the part you say has no flavor?
Is using the leaf part bad? Ie, not just the stalk
Thanks!
I'm thinking the root end can be put in a glass of water and roots will grow, then plant in garden. Lemon grass is a perennial in zones 4-9 of USA. It can also be grown in a pot and moved in doors when freezing temps happen.

I didn't know. But I had my lemon grass sitting in the fridge for 2 weeks. Is it gonna be okay to use?
you can use and random bits like root etc in tea mixes
Can I use lemongrass paste to marinate tofu?
Hi Pailin, I love all of your videos. Can you make some videos on the various chili sauces? I've seen multiple chili sauces at Thai restaurants, like satay, chili oil, chili in fish sauce, and chili in vinegar.
I actually do have one that touches on that already in the "condiments" video, but it prob needs a refresh. Thanks!
hey Pai,
