I bought an electric canner as a christmas present to myself when you let us know they were on sale. I'm getting ready to can up some of the meat in my freezer. You inspired me to try doing some sausage and ground pork.
I have a Nesco pressure canner and I love it. I do wish that it held more jars but I still love it. I also have a traditional Presto pressure canner. I'm thinking of getting another Nesco as well, That way I can get more done at the same time. Good idea to can what you can out of the freezer, I'm going to start doing that next week. I learned to can during lockdown in 2020. Now I teach it. I just bought a Nesco (exact same as Carey) electric canner but I’m not confident because it seems to vent a lot of steam even when vent is closed.
I am getting ready to can sone Italian sausage. I like canning it in half-pints and adding one to a pint of ground beef when I make spaghetti or lasagna. Or it's the perfect size to add to a couple of pizzas. I wish I had thought to add some to the meatballs I canned the other day.
just curious as to why you didnt raw pack the sausage as you would ground beef Its so much easier and quicker. Just put meat in jars raw, seal, and can. no cooking meat no boiling water, just fill jars seal jars and can. meat makes its own liquid and cooks as it cans
ALL ground meats must be partially cooked prior to canning. It has to do with density and making sure that the heat reaches the center of the jar. If it is packed in the jar, it doesn't reach the proper temp, whereas having the separate small pieces does allow it. It's science!
I am not a canner. I would consider tomatoes & fruit but no meat. I am a texture person, and there are only 2 of us. I don't need to buy or can that much. Good luck to all of you who find it cost saving and convenient.

Mine vents a lot too. But so does my conventional pressure canner lol and yes nesco makes Carey 😄

We prefer it browned up first and i can drain off quite a bit of grease.

I tried canned sausage but I didn't like the texture.
