    Very interesting! I make this with cod often, gotta give it a try with salmon. For my cod version, I have some tweaks that might interest you; I wrap seasoned cod fillets in bacon and then coat them with flour. A layer of spicy tomato sauce in the dish, then the wrapped fish, along with green olives and mushrooms. Top that with grated cheese and more of the sauce. Bake and serve on a salad and pasta combo with some black pepper and lemon.

    Thanks, I was just looking for some baked salmon recipe and of course you have some great one. I'm definitely gonna do this next week. You are right, I think this begs for some rice (or orzo maybe?) to soak up the sauce.

    Could you add lemon juice to this? Overkill?
