    I'm from Australia and absolutely loving this recipe, thanks man. I'm only sixteen and wanted to do a little something special for my Italian family, this way very different but in an amazing way. Thank you so much not only myself but my family loved it, they licked the bowls too!!

    Poo-Yie!!! I wasn't even planning on cooking chili till I saw this video. I am so glad you convinced me to cook some !The smell is unbelievably good right now! Thank God for chili , and thank God for T-Roy ! You always bless me , my brother!!! My whole family is going to be soooooo happy to eat this!!!!

    I won the last Chili Cook-Off of with my neighborhood's association by basically using your recipe as a guide. At the end of the contest, the pot I took the chili in was clean. Not a single remnant of ever being 4 pounds of meat and ingredients in it. The meat quality certainly makes a difference! And there were 12 entries with about 45 people. Keep up the good work with more recipes.

    Man that looked great! With cornbread too, what a treat
    The best chili I ever made:
    Beef chuck chunks for the meat
    the standard Chili spices, but for the chile powdered I I seeded 7 different dried chiles, guajuillo, several cascade l, and Serrano.
    For liquid, a 12 oz ale, and a few cups of beef broth. For the tomato, I just used some fresh salsa and to thicken, I crumbled about 15 corn chips and put them in the chili. They just melt after some stirring. I served with onion cheese and more corn chips. This is based on one of Alton Browns (nerdy tv chef) chili recipes. but I customized on the spices.

    I did a modified version of this chili and won my works chili cook off. I did a couple trial runs to get it down and how I liked and killed it! Thanks T-Roy I enjoy your videos. You are always on rotaion to get some ideas. Doing a chuck roast on the smoker this weekend for the first time. Watched your video and a couple others and its going to be amazing!

      I made it 2 nights ago, i used a slow cooker and added extra things like chopped hot and sweet peppers. it was delicious, i also used wine which gave it added flavor and made it more beefy tasting

      i used a homemade wine a friend gave me.. it was rather fruity and sweet wine. no problem and thank you as well!

    Just stumbled onto this video, and I have to admit, not only does the chili/cornbread recipe look excellent, but you are one entertaining dude. Had a blast watching this. I'm a Northern boy, Michigan born and bred, but we love our chili up here as well, especially on a cold winter day. I have to try this. Thanks!

    Hey T-Roy, there’s this stuff called Better than Bouillon. It’s a paste and it comes in a jar and the flavor is really good!
    Also nice to not have to pull out a knife if you want an odd amount of the bouillon.

    You are correct Karen and the original recipe doesn't call for beans. However, I grew up in La. and we always added beans. The chili was great without beans too. It's really a superb recipe which I'm sure you will enjoy. Thanks for stopping by and commenting!!

      +Rosamaria Carrillo Well, howdy Rosamaria!!!! I speak the truth when I tell you that I have made a lot of different chili recipes, but this recipe is still my favorite. This chili is packed with flavor. The way you see me make it is a bit on the spicy "hot" side since I floated the peppers in there so long. If you don't want it so spicy, pull out the peppers before they fall apart in the chili.     As an Aussie we don't have a few of those ingredients, but I was most impressed with the meat grinder & the cuts of meat that you used wich many butchers don't have, & that you added beans wich I've heard people say arrh beans are just a filler but I like the taste of the red kidney beans & black beans, also in these times when shelves are becoming more empty, what ever you can put in there that will soak up flavor or add flavor I'm all for it. But was totally impressed with the meat grinder & that you ground your own meat.
    I know chili is an American thing but as an Aussie I'm trying to find what suits me with the products I can find in Australia, much respect for sharing mate, God bless.
    Man I was just scrolling through your videos & there's so much stuff we don't have here in Australia, you guys are so lucky

    Great question Sean! I have the Thunderbird TB-300E Meat Grinder. I cannot remember where I purchased it, but I paid about $550 US. If you search the net, you'll find quite a few places you can order it online like I did. It's much bigger than I thought it would be, but I love it! It's all Stainless Steel too.

    I'm a Texan, born and raised. I'm also Hispanic. Round here it's blasphemy to put beans in chili. To hell with that! I'm Mexican. I want some damn beans in my chili. This is the 3rd time I use your video/recipe. I love it, my kids love it, etc. I plan on tweaking it and adding few things here and there because there's a few things I want in it but it's great! great video.

    I loved watching you grind the meat. My father had a restaurant in Alabama and I would watch him grind the meat. After he was done he would run sliced bread through it. It was easier to clean. Memories 🙏🍞

    T-Roy, I've been looking through and watching chili recipes on UA-cam trying to find one that looks like the chili my mama used to make and I found it.....yours!!! I can't thank you enough! It sure looks like most of the ingredients I remember her using, with the exception of possibly that Sazon Goya. I lost my precious mom a year ago, and this brought back so many wonderful memories! I could smell her's cooking by the end of your video. She also taught me to make cornbread, and yours is the same recipe with the exception of that little bit of sugar! This is the first video of yours that I've watched, and I instantly subscribed and hit that bell! I can't wait to go through your channel, watch your other videos and use your recipes!       Hi Candy, thank you so much for the kind comment. This is a terrific chili recipe and you can leave out the Sazon Goya if you wish. And I grew up eating non-sweetened cornbread too, but my wife likes a hint of sweetness which is why I added some sugar. I'm happy that I could bring back fond memories for you with your Mom.       I have been searching for a yummy hot dog chili and came across this and it looks absolutely delicious. I plan on making it when the weather gets cooler. I want to give you a tip that my dad uses. He puts 1 - 2 tablespoons of Sour Cream in his cornbread depending on the size and it makes it so moist - it is amazing! I hope you try it and see if you like it or not. Thank you for sharing this recipe. God bless.

    For all those unsolicited "Critique givers" that say this is not home made because he uses a bunch of canned ingredients... granted... would it be more rustic tasting if all the powdered and canned ingredients were replaced by the real stuff ?(cook your own beef/ chicken broth from sctratch, use all fresh seasoning seeds and grate them, dice fresh tomatoes, make fresh tomato sauce, cook your own beans if you want to add beans, etc).. Sure! but would you really spend all that much more money and extra hours to make a very similar tasting dish that will be gone in 10-15 mins after you serve it?? Especially for meals made in big quantities such as this one. I don't think so.... I don't advocate for cheap, but I do advocate for practical. Especially for busy working parents who don't have the luxury of always making/using everything from absolute scratch. This recipe is amazing and will taste great as is... Thanks to the handsome, skillful T-Roy who shared it :)

      if you removed one type of chili spice, and can't notice which one is missing...
      it needs to be removed from the recipe

      Also, I've read competition chili's can't have fresh ingredients. I've looked into competing with my chili recipe and rules stipulated no fresh ingredients.

      Thomas Bonnell that why it’s not very good. It’s about the money not the chili. This guy is a total joke 0 techniques for building flavors. Kinda pisses my off that he is misleading newbies presenting himself as a seasoned cook. If you can’t render beef I mean what’s the point? That’s why he uses bouillon cubes. I guess narcissist come through different doors.....

      @@kevinhullinger8743 You do realize that he is following somebody else's recipe, right? He only mentions it about 10 times during the video. That is why he is using the bullion cubes. I've seen quite a few of his videos, and the man can cook. He was paying homage to a recipe that won at the Terlingua cook-off.
      The reason cans are used instead of fresh in chili cook-offs is because of the time factor. You only have so long to get your meal done, in a cup, and in front of the judges. I personally don't like cook-off chili, I prefer my own with fresh ingredients. You had no reason to shit on this guy's skills for making the dish the way somebody wrote it down.
      Sounds to me like you might need to get off your damn high horse, or make your own video.

    Yes indeed, but it was a balanced spicy. Not over-powering at all. All the flavors melded together and this was the best chili I've ever eaten. If fact, now that it's getting cooler, I was thinking of making it again! Thanks for the question Bacon Fl1ps!

    I hadn't had a chance to make it until today...and WOW it was so good. So flavorful. I loved it and my kids loved it. I did have to skip out on the Cayenne and the fresh Peppers though, because of the kids.

    No, I do not cut the peppers. They just float in the chili to add a hint of heat in the background. Of course, you could cut them up as you say if you wanted it hotter. That's what's great about cooking, you can do it just how you want! Thanks for watching!

    Hey Jason, thanks for watching. It did have a little kick to it, but not too much for a Cajun. One of those Serranos cooked to peices and its juice got incorporated into the chili which made it hotter than I would have expected. Next time, I won't float the peppers as long and that should keep it from being too hot.

    On the corn bread I would also add cream corn a onion, green chilis and cheese for some great tasting Mexican corn bread it increases cook time but gives you a great slab of bread

      Well, I'm honored and congratulations on your new baby!! That's very exciting news!!! If you make this chili, you may want to only float 1 pepper in the chili or not float any peppers. The chili may be too spicy for you if you aren't used to that much pepper. I will say though, of all the chilis that I've tried, this is by far my favorite recipe!!!     Jason, I brought the leftovers up to work and all of my coworkers, except for one, thought it was just fine. That one person did think it had a little too much heat, but she ate it anyway. Needless to say, they finished that chili off quickly. So, it wasn't too hot for them.

    The main reason grinding your own meat is better than store bought is that you know what went into the grinder. You know the type of meat, the quality, the amount of fat vs lean, etc. Plus, fresh is always better tasting. Hope that helps.

    Oh I'm from North Texas and I prefer beans in my chili. Chili without beans is just as good too. I'm going to try my hand at some homemade chili now. Thanks for the inspiration.

    T ROY, see if you can find BROOKS, CHILI HOT BEANS. It's what I use and I've won multiple 1st place cookoffs, I also add 1 can of black beans .

    Well that answers that question... Cornbread at the bottom of the chili bowl or cornbread on the side. Thanks for the video

    Oh no! I plan to try it with the Sazon Goya! I just wasn't sure that it was around back then...lol! I just took an early retirement, myself. I've been hearing a lot about it lately, and I like spice! Since this was the first time I had ever seen one of your videos, I was hooked and watched several last night! BTW, congratulations on your Silver UA-cam award! Since I'm a little late coming to the game...lol, goodness knows what other awards you've won since then! I didn't know most of your videos pertained to "grillin and smokin" (and that's awesome cooking, too), I was wondering if you had more videos "in the kitchen"? I did see you mention something about a Spaghetti Casserole, but haven't been able to find a video on it, so far. If you have one, I would appreciate the link! As for the sugar in the cornbread, let me say what a good husband you are to have grown up without it, and then adding that little bit of sugar, just for your wife. She must be a gem! I hope we get to see more of her! Please continue to keep those videos coming, and hopefully, some more of your "indoor" recipes, also...lol! May God continue to bless you and your family as we start this new year!

    Thanks Brenda, this was the best chili I've ever eaten! You will need to tame it down a bit for kids. Definitely do not float the whole peppers in the pot. You may want to only use half (or less) of the cayenne pepper in the recipe. Chili powder isn't really spicy hot, so it should be fine. It does take a while to cook, but be patient. It is really worth the effort! Let me know how you like it!!!

    That is some of the most awesome looking chili I've ever seen. I am very impressed. Like you, I prefer beans in my chili. I also like the looks of your cornbread. Gonna check out more of your videos and I'm gonna make that chili this weekend,...gonna get a little cold here in Tennessee and chili is what we like to have on the stove here when it gets cold.

    I've got this going right now. I did make a few modifications though; you know I can't leave anything alone. I added a pound of sausage, and a pound of ground beef in exchange for the two pounds of ground beef you used. I also added some garlic cloves and a chopped onion that I cooked before adding it to the mix. I'm also letting this go in the crock pot for while. I'll let you know how it turns out.       Oh man, oh man, oh man, let me tell you brother, this chili is some kind'a fine! I could hardly wait, and kept dipping in to taste it. I ended up with a lot of oil on top, probably from the sausage. after I scooped that off it's good to go! Thanks again for getting me motivated. I love watching your videos and trying out your recipes.

    I like both kinds of chili..........beans or no beans. This looks so good without the beans, going to give it a try. Going to try the cornbread recipe too, I love corn bread. You should try some with pork cracklings in it............yummy. Good video.

    I love the recipe and all your videos. I just messed up where I didn't use light chili powder, and it came out kind of strong. And a little more spicey. But all that can be adjusted.

    I don't add any sugar in my cornbread and I cook it at 425 degrees. Also, I save my bacon grease and use that in the bread rather than lard and/or oil

    Probably had less liquid because you drained the browned beef. I would also have left he chuck in 1/2 inch cubes instead of grinding. I can’t wait to see you make sausage with your new grinder!

    nice recipe, I tweaked it, marinated the beef in chilli seasoning, peppers and onions then cooked the beef on the grill till done. then ground the meat and started with the chilli.

    I started watching and was gonna leave ....another Chili cook...but my wife said hold on....must have been your accent ...we are from slightly north of Houston...your fixin's look like a winner ...the first time I cooked chili for my wife....she is originally from Russia....it was ...wolf's brand ...hehehe ...can to heat to plate ... with cornbread....but you have inspired me ....to try the real thing ...I have cooked chili from scratch before ...but will give your recipe a try....no grinder...but course grind is available ...could not stop watching ...nicely done

      You can cube the beef into 1 inch cubes. That's how most chili is cooked in Texas. Some contests don't allow ground meat. The grinder he's using is about $1000 but you can buy a good hand crank grinder that mounts to a table and grind it like they used to do back before electric grinders. I used to use my grandmas old hand grinder to grind meat.
