I think one of the best things about that first fight with Baldur is that, when modders messed with the cameras to see what happens to the character models, they discovered once Baldur is out of sight over the ledge, he gives Kratos a double 🖕🏻🖕🏻 as he falls.
Fun fact: in the myth Baldr’s mother went to every thing that existed asking it to never do harm to her son, they all agreed except for one tiny plant by the name of mistletoe, making it his only weakness. The myth goes that at a party Baldr soon after becoming”invincible”, he asks the other gods to try and kill him through various means, with no success. Loki thinks Baldr is being arrogant and stuck-up so he interrogates everything that agreed to not kill Baldr until he finds mistletoe, thus learning his weakness. Loki takes the plant and fashions it into a dart. Loki then goes back to the party, and “joins” the competition. He throw the dart at Baldr, immediently KILLING HIM. A GOD LITERALLY DIES. Baldr is sent to Norse hell to live with Loki’s daughter Hel for all eternity, and this event is widely considered to be one of the main reasons Loki gets shackled to a rock for all eternity, bound by the entrails of two of his sons, with a snake dripping acidic venom on his face for all eternity. JEEZ!
Small correction/alternative version of the story; Loki didn't use the mistletoe arrow/dart. He tricked Hod, who was blind, into using it. They *Really* got pissed at him for sabotaging Baldrs resurrection. Remember, Hel promised to release him if Frigga could convince every living being to shed a tear for Baldr. And Loki being, well Loki, disguised himself (shapechanged in the story) as an old woman, who refused to cry for Baldr, or as the quote goes "My eyes will remain dry". *That* is what made them chain him to the rock when they found out.

Not quite eternity. According to the mythology he breaks free for Ragnarok and leads the giants against the Aesir. Ultimately he and Heimdall mortally wound each other in the final battle, which is where his story ends for good.
Seymour Guado of Final Fantasy X. Killed 3 different times, comes back stronger and more deranged every time. The only way to permanently get rid of him is with a sending ritual.
King Bulblin from Twilight Princess doesn’t get stronger when he dies, because he doesn’t die! All we do is knock him off a bridge twice, and then he shows up in the Gerudo Desert looking for a fight, and then he comes back for a fight in Hyrule Castle, where after Link defeats him, he finally admits defeat and says that all he does is follow the strongest side. The second time we knock King Bulblin off a bridge, sure he has shields on both arms, but we have our newly acquired Bow, and all we need to do is shoot him in the middle with an arrow. And the Broodals from Super Mario Odyssey also don’t get stronger every time they die, because they just get harder. And the Robo Broodal is an easy boss. In the first fight, just knock the bombs back with the Pokio Capture to destroy the leg armor, climb up and take out one of the Broodals, and repeat this three times. In the Dark Side of the Moon Kingdom, you have access to Hammer Bros. Fling infinite hammers to destroy the leg armor, climb up and take out one Broodal, and repeat this an additional three times. Plus, you have low gravity in the second fight with Robo Broodal, so your jumps are higher.
There's also the King Bulblin match in between the second one and the final one (the final one, incidentally, being when he gives up and gives you a key), but it's basically the same as the final one. I don't even know if he has more life or does more damage.
Seymour Guado from Final Fantasy 10. An absolute menace. With a total of four different battles, Seymour Is determined to defeat our heroes transforming and growing stronger after each defeat.
Baldur was toying with Kratos in their first fight, he didn’t get stronger by dying. The one who got stronger by dying was Kratos every time he died in the first trilogy.
Ryder from Mass Effect Andromeda. They die for 23 seconds at the end of the first mission, but are saved from death by S.A.M. This also powers them up by making them the pathfinder.
For shadow of war, i had an Orc come back about 3-4 times. I killed it early on, and he haunted me through the entire area, into the next. It was horrofying
Well... if we excluding the obvious ones like Bowser and Ganon... I'm sure in the DS games Bowser was reduced to bones and resurrected back even stronger.
What about Phoenix from Marvel vs Capcom 3 who if defeated with full super metre will become dark Phoenix one of the most broken characters in the game
Biggest mistake Capcom made was killing off Wesker. He was the best enemy character in Resident Evil and my personal favourite character in the whole series.
Commander Shepard from Mass Effect. It's even joked about in one of the games: "They killed you and all it did was make you angry."

you forgot that Jack wasn't even dead when Ethan beat him a 3rd time he had to go down 5 times before he was down for the count.
