Honestly - I don't know. I was playing the game before the release so I didn't have any idea when and where to go. I just stumbled upon this boss while doing a sidequest after getting the gun :) edit: just keep in mind that this is not the Gigas you fight during one of the earlier missions - this one is a different encounter in one of the sidequests on the desert!
You have to deplete the enemy's posture to do that, it's the yellow bar/circles under the HP. You can do that by perfect parrying (something I'm very bad at :D)
