My 16 yr old can eat so much Sushi too... He ate 30 pieces at the buffet one day... Im not too keen on it but dont mind a piece or two of the California roll and Dynamite roll.
I do the same with my sushu..dip it in wasabi and soy sauce...top with ginger.

Yes, you have to mix the wasabi!! Otherwise it's too concentrated!! I also add the picked ginger into the wasabi soy paste too to get that ginger flavor in there.
