    Love watching and learning when you see the minds of spices in the markets in india we as westerners wouldnt know the best to buy as it all looks the same.but the quality even in cheapest is certainly better than we get a small amount in a packet.your a great chef thank you

      • 2 tablespoons cumin seeds
      • 2 tablespoons cardamom seeds
      • 2 tablespoons black peppercorns
      • 1 teaspoon freshly grated nutmeg
      • 1 whole cinnamon stick
      • 1 teaspoon whole cloves
      1. Heat a dry skillet over medium-high heat and toast the coriander, cumin, cardamom, black peppercorns for about 10 minutes. Stir them from time to time to keep everything cooking evenly.
      2. When the ingredients have darkened slightly and give off a rich, toasty aroma, remove them from the pan and let them cool.
      3. Grind in a spice grinder or coffee grinder.
      4. Grate the nutmeg and add it to the mixture.
      5. Store in an airtight container away from heat.

    Saleem I love your easy recipes. I enjoyed your samoosa recipes. I bought the strips for my samoosas and it was 7cm. But I like your 6cm measurements. I will definitely try your method. It’s so easy and you explain so beautifully and calmly.
    Do you have workshops? I think after lockdown you need to come to East London to do some workshops. It will be so interesting.
    So I like my mixed masala a little redder. Sweetie how will I achieve that? I have food coloring powder from India. Can. Add it to your recipe? Bless your hands. 🙏🙏🙏

      Garam masala is a spice blend of whole spices. Cinnamon, peppercorns, corriander seeds, cumin seeds and cardomom pods. It is toasted in a pan to release its flavors, then ground to a powder. Thanks. God bless you 🙏
